I just wanted to say thank you, thank you for sharing this recipe!! I've been making them since you first posted this for lorilei and everyone loves them - they were a big hit at my son's Sunday School class. I make them in mini-muffin tins - more work, but they make such a nice snack. Anyway thanks! And looking back at the muffin thread makes me realize how many more great recipe were there that I haven't tried yet!!

I must say that I think that thread is my favorite of all time! We are big muffin fans here and I have tried many of them. Lindrusso, your cranberry orange muffins were wonderful! And my son has been a big fan of the sweet potato muffins. There was also a bran muffin recipe that we have used as well.

Cinnamon Doughnut Muffins??? I missed this one the first time through (bad girl!), so I'm glad that Alysha posted this thank you. Like you guys, I am a HUGE muffin fan. Maybe that can be next year's Lenten sacrifice, which means that I had better get my fill of them in the next 11 months. Starting now!

Could I use cinnamon chips in these? I just ordered them from KA. Do you think they would work?
It's a co-workers Birthday this week and I thought it might make a nice treat.......and that way I can nibble one too!

The Cinnamon Doughnut Muffins sound wonderful! I missed these too! Was wondering if I could substitute drained applesauce for the 1/3 cup vegetable oil in this recipe. Has anyone tried it? I would also like to know about the cinammon chips! Sounds good!

Kelli - I'm not sure about the cinnamon chips - they are pretty flavorful already - the nutmeg adds lots of flavor. But that's a totally personal thing - you might want to bake a few without chips - you can always add them to the batter if you feel they'd be a good addition.

Jewel - Again, this is a personal thing. I don't like muffins made with applesauce, but you could give it a try! At 34% of cals from fat, they are fairly low-fat already - at least as muffins go.

Here is another muffin recipe that has become a family favorite. I know everyone probably has a favorite blueberry one, but I thought I would post anyway!

Aunt Betty's Blueberry Muffins

Amount Measure Ingredient -- Preparation Method

1/2 cup Old-fashioned rolled oats
1/2 cup orange juice
1 egg
1/2 cup vegetable oil
1/2 cup sugar
1 1/2 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup blueberries
2 tablespoons sugar
1/2 teaspoon cinnamon

In large bowl combine oats and orange juice; let stand for 5 minutes. Beat in the egg, oil and sugar until blended. Combine the flour, baking powder, salt and baking soda; stir into oat mixture just until moistened. Fold in blueberries. Fill greased or paper lined muffin cups two thirds full. Combine topping ingredients (2 T of sugar and 1/2 tsp cinnamon) and sprinkle over batter. Bate at 400 degrees for 20-25 minutes or until a toothpick comes out clean. Cool for 4 minutes before removing from pan to a wire rack.

Kelli....the cinnamon chips sound good but we won't know unless we try them. If you are going to make these muffins, put some batter aside for about 2 or so and fold in some cinnamon chips. Let us know how they come out if you do this. http://www.cookinglight.com/bbs/smile.gif

Cinnamon Doughnut Muffins

1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
3/4 cup granulated sugar
1/3 cup vegetable oil
1 egg -- lightly beaten
3/4 cup milk
Jam of your choice

TOPPING:
1/4 cup butter or margarine, melted
1/3 cup sugar
1 t. ground cinnamon

In a large bowl, combine flour, baking powder, salt, nutmeg, and cinnamon. Next combine sugar, oil, egg, and milk; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full; place 1 t. jam on top. Cover jam with enough batter to fill muffin cups 3/4 full. Bake at 350° for 20-25 minutes or until muffins test done. Place melted butter in a small bowl; combine sugar and cinnamon in another bowl. Immediately after removing muffins from the oven, brush top of muffins with butter and sprinkle with cinnamon-suga rmixture. Serve warm.

Since we're talking muffins, I thought I'd just give another thumbs up to the Strawberry Cream Cheese muffins recipe (not the one from the recent CL issue, but the one posted by lindrusso in March - was this MamaSue's recipe originally?) I'm in charge of treats tomorrow at my Bible Study group, and I made these muffins, and also the Lemon Biscotti with Sour Lemon Drizzle! Wow, does my house smell good!

I know I've said it before, but I'll say it again...I LOVE this BB! Thanks for the great recipes!!!

Oh, bless you for bringing that previous muffin thread to my attention again! My toddler is a muffin addict (especially the mini ones!) so I've just been looking for some new recipes to make for her. I am putting the Cinnamon Doughnut Muffins on my list for next week. Thanks!
