I am posting this review even though I can't rave about this recipe my kids and DH were ecstatic about it and kept thanking me between bites. My 5 year old told me he would eat this all the time if I made it and he is picky. DH said it was very fresh tasting, even though the two main ingredients came from jars and cans. Any one else have an opinion on this one?

Unfortunately we didn't care for it. I did have a bit more roasted peppers in than it called for but even so, we limped through it.

Yes, I can't explain it, it was from a can and a jar, but it really tasted great and was just the thing after a snowy day in New England. I'll chalk it up to my DW's excellent talents in the kitchen. --Love, lsdesign's DH

i was thinking of adding shrimp to the penne for friday, what do you think? or should i just try the orange-saffron shrimp & snapper stew?

Heh heh. I loved the message from lsdesign's DH (complete with the frowny face). It reminded me of my boyfriend 2 days ago when I was bugging him to explain why he thought the Shrimp Fried Rice (Dec 2000) was excellent. Only 2 other dishes were ever declared excellent by him in the 6 years we've been together, and I didn't understand what was so special about them either, no matter how hard he tried to explain.

Thumbs up for this one. I added a pound of shrimp to make a complete meal. Leftovers were great. And, it will freeze very nicely.

It would also be good with added cooked chicken or italian sausage or smoked sausage.

btw, 2 cups of chopped bottled peppers was a 13 ounce jar.

Donna - thanks so much for posting the conversion (2 cups chopped = 13 oz jar). CL recipes always seem to call for 7 oz jars, and I've NEVER seen 7 oz jars of peppers here - only larger ones. This will come in really handy!

I just made this one tonight and thought it was very good! Kind of like Arrabiata sauce with a twist. http://www.cookinglight.com/bbs/biggrin.gif Had just enough spice and sweet (from the peppers) to make it perfect with bread!

For dessert, I put together Fresh Fruit with Strawberry Sauce (CL April, 1995). Which was a perfect finishing touch.
