I just had a question about using frozen shredded zucchini - I'm thinking of that yummy looking flax pecan zucchini bread in May's issue - do you think using frozen stuff I shredded would work? Will it make the cake too watery? do you thaw it first or throw it in all frosty?

I use it when it's all that I have. I thaw it and press it between towels first.

Thanks Paris M. I took your advice and the Pecan, Flaxseed and Zucchini Bread from May's CL is cooling as I type. Seems to have worked!
