View Full Version : Soup emergency--please help!

I made the yellow bell pepper soup from March '05 today. It is for our supper club tomorrow and it looked delicious, but it tastes bland and a little bitter. I can't toss it--I have no time to make a new dish and I spent $20 on those yellow peppers. Any thoughts?

I would add a pinch of sugar and some red pepper flakes. Good luck! I hate spending $$$$ on food only to have it turn out bland and bitter!

Hmmm ... I'd add a little sugar, just a pinch or two. But, I'm not the most experienced pepper or soup person ...

I haven't made the recipe, but looked it over... I often face a similar challenge of fixing something if the recipe isn't quite right--
If it's really bland, looks like it'd be good to add 1-2 teaspoons of curry powder to it; I think that'd go well with the flavors in it. Also the problem may be that they skimped too much on salt; try adding 1/4-1/2 teaspoon salt (the sodium count in their analysis is low enough that I don't think this'd make it super high), plus another 1/4 teaspoon black pepper. If you don't like curry flavor, maybe add 1/2 teaspoon cumin plus the salt and pepper. Of course simmer a little while after adding stuff.

Oh, no! I hate it when that happens. I made the soup a few weeks ago, and I also thought it was bland (at first), but not bitter. The good news is that it got MUCH better after sitting a day, so perhaps you could just wait until tomorrow and taste it again. If it's still bitter, I'd agree that a bit of sugar couldn't hurt. I don't know the recipe but can you add some sherry and a little cream to flavor it?
