Can I mix up a cake batter and bake the cake the next day? Or would this do something weird to the leavening agents? Please advise.

I wouldn't do it - I don't think the leavening agents would like it. If you'll notice, sometimes the batter starts to bubble even before you put it in the oven. You'd probably lose a lot of lift if you don't bake it right away.

You can measure out the dry ingredients ahead of time--I do that for muffins or pancakes the night before and it's a big time saver.
