I am making the barbque Salmon in the back of the May issue tonight. Does it work best to take the skin off before or after you cook it?

I normally leave the skin on, and it will flake off easily after cooking.

Actually, when you place it on the grill make sure it is skin side down. It will cook without drying out and when you lift it off the skin should stick to the rack.

It is much easier to take the skin off after cooking. I removed the skin to make lorilei's dish and it was a pain. But worth it so I didn't lose any of that pesto topping!!

I hope you enjoy the recipe as much as we did the other night. I plan to make it again this weekend!!! The pineapple juice really helped add flavor. YUMMY!!! Oh, and I leave the skin on as well.

Did everyone use the grill? I am planning on using the oven, and was wondering if it would be as good. If anyone has made this recipe in the oven, please let me know.

Karen, I made this in the oven. I put a grill rack over a disposable aluminum pan, sprayed the rack with Pam, and threw the salmon on the rack. I thought it tasted great.

I made it in the oven also. I had planned on grilling it because the recipe said "BBQ Salmon" and I assumed it was on the grill. Then I read it and it said oven so that's what I did. Came out great!
