View Full Version : Looking for make ahead breakfast ideas

Does anyone have any that they've tried that they would recommend? Anything from the CL cookbooks is great since I have all of them (but haven't necessarily tried it all!) My mom is having company this weekend and is looking for some new ideas. Thanks!

We LOVED the French Toast Souffle. I kicked the spice up a bit, added more cinnamon, nutmeg and a touch of clove just to make it more fragrant and tasty. What was so wonderful about it was that I did all the work the night before, then set it out first thing in the morning to come to room temperature, then baked. Everyone raved! In fact, I'm making it as a special 'brunch' dish when my parents visit in a few weeks. Talk about an 'impression dish'! http://www.cookinglight.com/bbs/biggrin.gif

You might also try searching for "strata" - I found several more threads with breakfast ideas under that search.

I second the artichoke and ham strata recommendation (although I haven't tried the French Toast Souffle yet). I've made the artichoke and ham strata frequently for brunch guests and it's always turned out very well.

I third the artichoke and ham strata- it is easy to make ahead the night before and then just pop in the oven the next morning.

this is SO YUMMY!!!

OVERNIGHT CARAMEL FRENCH TOAST
1 loaf French bread
1 stick butter
1 cup brown sugar
3 tablespoons Karo Syrup (corn syrup - it doesn't specify light or dark)
6 eggs
1 & 1/2 cups milk
1 tablespoon vanilla
cinnamon
fresh fruit

Melt butter, brown sugar, and Karo syrup over medium heat while stirring. Bring to boil and then pour into 9x11" casserole pan. Slice bread into 1" widths and lay over caramel mixture. Mix eggs and milk and vanilla and pour over bread. Sprinkle top with cinnamon and cover with plastic wrap. Refrigerate over night. Uncover and bake in 350-degree oven for 45 minutes. Serve with fresh fruit and syrup.

If you go under search and type strata you will get many recipes for stratas breakfast casseroles etc.

go to the upper right hand corner and click on search, then type in the key words "breakfast casseroles" and a bunch of thread will come up with some great breakfast ideas. Hope this helps.

You might try running a search for "breakfast casseroles". There have been a lot of threads discussing this. Two that most people seem to like are the French Toast Souffle and the Farmer's Casserole (both recipes have been posted on this board).
