What a beautiful meal we had last night :D
"Floribbean" Grouper with Red Pepper-Papaya Jam-this was excellent and sooo pretty. I did use grouper (my favorite), subbed Splenda for the sugar, and subbed mango for the papaya (dont like). I double the fish part, but left the "jam" as is and there was plenty. The crust on the fish was delicious. I served the fish over couscous, but next time I will not bother.
Roasted Asparagus with Thyme, Blood Oranges and Pine Nuts-BB-bobmark226-fantastic and went well with the grouper. Very easy to put together and I used a navel orange.
Baby Spinach Salad with Warm Citrus-Bacon Vinaigrette-CL-5/05-another winner.
this meal was time consumming to put together and used alot of equipment, but was well worth it. The only thing missing was the sound and smell of the ocean. I don't think you could buy a meal like this one in a fine resturant.

I want to try the fish recipe but have never seen grouper in my neck of the woods. Was thinking that some fresh halibut might be a good substitute. What do you think, Terry?

Yes, that or sea bass-oh, jst any mild white fish will do :)

I made this for dh last night. We had it at Supper Club on Wednesday and I couldn't stop thinking about it, it was so good!! He loved it too! The breading is really delicious, with a slightly sweet taste from the coconut. The red pepper/papaya jam is great accompaniment to this fish also. I served it with Creamy Four Cheese Macaroni and Italian Stuffed Summer Vegetables, from previous CL issues that I found doing the recipe search. All of these recipes are winners, though I was slaving away in the kitchen all afternoon. It was worth it though!

We had this for dinner last night also and it was fabulous! I used fresh halibut instead of the grouper. Both DH and DD raved about it!! I also made the salad recipe mentioned by Terry above and that was excellent too. A great dinner!

Another positive review for this one. I doubled the "jam" amd shouldn't have . We had a lot left over. This was my first time having/preparing grouper and I really liked this fish (not "fishy" at all). We had this with the Green onion Rice Pilaf at the end of the magazine as a menu suggestion and the Citrus Spinach Salad which was also very good. A great meal!!

DH and I gave this 4 stars (the best!). I didn't have papaya, but subbed pineapple and it was great. The panko crumbs are indispensible, though. I don't think that it would be nearly as good without.

I finally made this last night. I used orange roughy instead of grouper (at the recommendation of my fish monger, who said it was more fresh) and we loved it! It was so good! I didn't make the jam, instead, I made a relish with chopped mango, red bell pepper and jalepeno, some rice vinegar and a tablespoon of peach-jalepeno preserves. It was great on top of the fish. DH loved it (although he loved it a little less when he found out how much I paid for the fish! :rolleyes: ) and kept repeating that "this is so good!" I served it with some cashew rice I made up with a little leftover chopped cashews, and sauteed spinach. Very pretty meal!
