I was going to post in the original thread (new cookbook aquisitions) but didn't want it to get lost. If not too much trouble, would you be able to post the pasta recipe that you mentioned in your post. I'd like to make this for a mother's day brunch. Thanks so much.

I will post it tonight, it is from the Gratins cookbook. I was not sure if it would appeal to my boyfriend, but he had 2 heaping plates.

Mediterranean Penne Gratin

8 oz penne
2T unsalted butter
1 onion, minced
2 cloves garlic, minced
2C chicken broth (I used veggie)
1 C heavy cream
5 oz feta, crumbled
1/2 C Parmesan
2T fresh oregano (considered using dried, but the fresh really added to the dish)
1 t fresh thyme (used dried here)
2 roasted red bell peppers (used jarred, for roasted, in a casserole, did not seem worth it for the cost)
1/2 - 1C kalamata olives, halved (used regular black, had them on hand)
1 pt small cherry tomatoes, halved

Topping
1 C fresh bread crumbs
5 oz crumbled feta
1/2 pine nuts (omitted, son does not like nuts in things)
1T minced fresh oregano
2 T unsalted butter, melted

1. Preheat oven to 375
2. boil pasta, drain, set aside
3. melt butter , add onion, cook 5 min, add garlic, cook 1 min, add stock, bring to boil, remove from heat, stir in remaining ingredients & put in 2 quart casserole dish (oiled)
4. combine topping ingredients, drizzle with butter and toss,sprinkle over top of gratin (melted butter and stirred the other stuff in same pan as filling, to save a dish)
5. bake 30 minutes

FYI leftovers taste even better after the pasta has absorbed more of the sauce
