I couldn't find a review of these. They are very good. I was a fraid they would taste too "healthy", but no they don't. I like the hint of orange in them. I used Egg Beaters and replaced some of the brown sugar with Splenda. I would make these again.

Terry,

I just posted a review on the Zucchini-Pecan Flaxseed Bread and commented on a slight after taste. Just curious - Did you experience that with the muffins? I'm new to flaxseed and plan on trying the muffins this weekend.

no Peggy, but I have been using flaxseed for a couple of years, so maybe I'm immune to any after taste.

Terrytx - you crack me up.....don't want them to taste "healthy" :-)

I haven't gotten through my May issue yet, but these sound yummy. DH has dramatically increased his training recently, so I'm looking for healthful things to have around the house to much on. These sound perfect.

These muffins are excellent! I made them tonight for breakfast tomorrow and we all couldn't resist trying one as soon as they were cooled. Very moist, great flavor, love the streusel topping. They really don't taste "healthy", which is a big plus! And no funny after taste so it must not have been the flaxseed...

I agree these were good! I made them for a work function and just "neglected" to tell anyone that they were "healthy". They were really well received. :cool: :D

I did sub pecan's for the walnuts and I used some leftover streusel from a sour cream coffee cake that I had made.

I didn't notice an aftertaste either. :confused:

That fear stops me from trying a lot of lowfat muffin recipes but I really liked this one! I have been trying to incorporate flaxseed into our diets and this is a great recipe for doing so. The only change that I made was to eliminate the walnuts from the topping. My 2 year old won't eat anything with nuts in it and I don't particularly care for walnuts. Next time I might make some of them with pecans though. I will definitely repeat this one.

I made these muffins and we all loved it at home! They were very moist and just sweet enough. I really like the flavor of the flaxseeds and apple muffins are my favorite so these hit the spot here!
I omited the struesel because I did not have any walnuts at home, and ended up making 12 nice sized muffins. (I am not a big struesel fan anyway, did not miss it at all)
Yumy, will definitely make these over and over again!
