My questions:
I have made tofu ice cream before; easy enough. Do I blend all the ingredients in a blender before hand? (I imagine yes). Do they need to be chilled for any length of time before they go into the ice cream maker? Could I use mini choc. chips instead of shaved chocolate? Or small "chunks" of chooclate? What do you think the lenght of churn time might be? 25-30 mins?
TIA! Tanya
Light Mint Chocolate Chip Ice Cream
(I believe this is yorkshirepud's recipe. If not, I apologize, and please correct me. I copied this down so long ago that I didn't realize I forgot the poster until today, and searching for it got me nowhere).
mint chocolate ice cream ... it was delicious ... i kind of did my own recipe ... didn't do the cool whip thing ... just the tofu and some milk, sugar, extracts and then shaved semi-sweet chocolate ... don't really know the measurements as such but it was about:
1 cup of pureed silken (firm) tofu
1/2 cup 1% milk
about 1/4 cup sugar
1 tsp vanilla extract
1 tsp mint/peppermint extract
then shaved chocolate ...
as you can see ... the recipe on made a small amount ... about 1/2 quart ... but my SO and I ate it right out of the container while we watched a movie!
i did like the tofu ... but i think i prefer my milk/buttermilk variation for my base ... i would try it again though ...
