I am considering bringing a dessert to work on Wednesday and school on Wednesday night to celebrate my birthday.

I was thinking of making cupcakes on Sunday and frosting them on Tuesday night.

Would they be fresh enough?

Might I be better off making a different dessert...maybe something quicker I could make just on Tuesday night?

You could freeze the cupcakes (unfrosted) and then put the icing on them Tuesday night.

Thank you for answering so quickly. I think I'll either do that or make a plate of the coconut lime sours (since the recipe conveniently came around again) and brownies.

If you don't want to freeze them, I'd ice on Sunday, too if you're not going to eat them until Wednesday. The icing will help keep them fresh. But, freezing would be the best option.

If you're looking for alternatives, Dulce de Leche brownies go over well at work. :)
