I especially liked the Blueberry Crisp that was pictured on the cover of one of the summer 2000 CL issues. It was so tasty! I also tried it with a combination of blueberries and raspberries. Can't wait until they're all in season again! http://www.cookinglight.com/bbs/smile.gif

Thanks KatherineY! I keep the yearly summeries in Word on this computer, and I found the recipe you mentioned in July pg 167. Now I have to dig out the magazine and find it http://www.cookinglight.com/bbs/smile.gif I have boysenberries down the canyon, and my sons have blackberries in theirs, so I know I will make some tasty desserts! The boysenberries are blooming now. I usually make jam, and pies and frozen yogurt with them. I pick the berries, freeze them, bag them, and put them in the freezer. This way I am not tied to using them right away. Made may last pie for Easter. I often make peach cobbler in the summer in a casserole, more fruit than topping.

I have been making apple crisps in the micro, now I wonder what other fruits would be suitable. Apple prices are so high right now, and the summer fruit will be in soon.
This recipe is great, I will post it below, and it takes just a few minutes to make. Low fat too!

APPLE CRISP 1 (Microwave)

Amount Measure Ingredient -- Preparation Method

3/4 Cup Oatmeal
1/4 Cup Unbleached flour
1/4 Cup Brown Sugar -- Packed
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
2 Tablespoons Butter
4 Apples -- Peeled/cored/sliced thinly
1/4 Cup Craisins
Combine oatmeal, flour, sugar and spices. Cut in butter and set aside.
Pare and core apples. Slice thin and combine with dried cranberries. Pour apple mixture into an 8X8 baking dish. Sprinkle with oatmeal mixture.
Microwave on HIGH for 12 minutes. Serve hot with vanilla icecream.

Blueberry crisp is awesome, and you can use rubarb, pears, strawberries or any other berries, peaches. And you can use frozen berries singly or in any combination. If you don't mind a little more calories and fat, you could make biscuits, sprinkle with sugar and bake the fruit with the biscuits on top for about 30 minutes at 350º. Peach Cobbler (with the biscuits) is fantastic especially with a little cinnamon sprinkled in. I can't wait for summer fruit!
