DH loves chocolate mint cookies. He's managed to give up the Girl Scout Thin Mints (we're very anti-trans fat in our house) and was happy with the substitution of the Newman's Own Mint Chocolate Chip Cookies.

When I saw this recipe I knew I'd have to try them. Pretty quick prep work. I did roll into log and freeze for an hour. Dough is very sticky and I was unable to slice dough. Just picked off chunks and rolled into balls. Cookies flattened out nicely.

Very soft when done; in fact, I cooked about 10 minutes longer than recipe called for an they were still pretty soft. They do harden a bit; now more like brownie texture.

Pretty tasty. Hubby likes 'em. Not super minty; would probably add a smidge more peppermint extract next time.

IRONY follows: One reason I wanted to make these cookies is that I thought they would be lower-fat/calories than the Newman's Own. Wrong! Imagine my surprise to learn that the CL cookies have about 40 more calories, less fiber and only .2 gm less fat! Oh well, at least mine are made with love <grin>

I had the same experience with the dough being impossible to work with. I didn't even bother with the freezing. I just quickly plopped 1 t. of dough for each cookie onto a cookie sheet and got just the right amount of cookies called for. I didn't change the cooking time. They were soft but seemed to be cooked enough.

We thought these were pretty tasty but definitely not as good as the Girl Scout Thin Mint cookies. I agree that a little more mint flavor might be nice.

I made these several days ago. They're just okay. I don't think I'll make them again. I like a crunchy texture in my chocolate mint cookies and as mentioned earlier, these are like a brownie consistency. I upped the mint to 1 tsp. , which is too much. It was too minty. Kinda tasted like the mint in the HC chocolate mint cookies you purchase at the store. Probably 1/2 tsp. would be right.

I dropped from spoon on cookie pan, as the dough was very, very sticky. It made 36 cookies as the recipe indicated. We still have over a dozen (usually cookies are gone by now).
