Ever since eating the green apple coleslaw from Alon's bakery in Atlanta, I am hooked on coleslaw. So, I was wondering if anyone has a favorite coleslaw recipe. I got this today from the Whole Foods e-newsletter, but have not made it yet. I thought about tweaking it a bit. Obviously everything does not have to be organic!
Organic Coleslaw
Crunchy organic cabbage, carrots, green onions and chives form the foundation of this natural coleslaw alternative to the more common mayonnaise-based version. Flavored with buttermilk, apple cider vinegar and honey, the vinaigrette can be easily adjusted to please your preference for sweet or savory. Best when made a day ahead in order to allow the flavors to blend.
Serves 6–8
1 small head of organic Savoy or green cabbage, shredded (about 6 cups)
1 large organic carrot, grated (about 1 cup grated)
1/2 cup organic green onions, chopped (green part only)
1/4 cup minced fresh organic chives
1/4 cup organic buttermilk
2 to 3 TB organic raw apple cider vinegar
11/2 TB expeller pressed canola oil
1 tsp (or to taste) dry mustard powder
1 to 2 tsp organic unbleached sugar or mild honey
1 to 11/2 tsp sea salt, or to taste
freshly ground black pepper, to taste
Place the cabbage, carrots, green onions and chives in a large mixing bowl. Stir to combine well. In a separate medium bowl, whisk together all remaining ingredients. Pour over the cabbage and stir to mix. Allow this salad to rest for at least two hours, if possible, to allow the flavors to blend. Before serving, adjust seasonings to your preference. This is delicious the next day.

For some reason, DH and I don't care for slaws with apple. We keep trying some of the best loved ones from this board and just don't they are for us. However, we do have other slaws that we love. This is our favorite:
Asian Super Slaw
Source: More Healthy Homestyle Cooking, p. 275
Asian Dressing
1/3 cup seasoned rice vinegar
1/4 cup creamy peanut butter (I use reduced fat)
3 tablespoons reduced-sodium soy sauce
3 tablespoons brown sugar
2 tablespoons pineapple juice (if no pineapple juice, I have used orange juice)
1 tablespoon dark sesame oil
1 teaspoon finely chopped ginger
2 garlic cloves, chopped
Slaw
5 cups shredded green cabbage (1/2 head)
2 cups shredded red cabbage (1/4 head)
2 carrots, shredded
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh chives
TO MAKE THE DRESSING: In a large glass measuring cup (or small bowl), whisk together the vinegar, peanut butter, soy sauce, brown sugar, pineapple juice, sesame oil, ginger and garlic.
TO MAKE THE SLAW: In a large bowl, combine the green and red cabbage, carrots cilantro and chives. Whisk the dressing and add to the salad. Toss to coat.
Makes 8 servings
Per serving: 108 calories, 4 g protein, 12 g carbohydrates, 6 g fat, 1 g saturated fat, 0 mg cholesterol, 405 mg sodium, 3 g fiber
Notes: I have always halved this recipe because there are only two of us and I KNOW I could probably eat all 8 servings by myself. I also cheat and buy the prepackaged cabbage and carrot mixture. Works fine by me (heads of cabbage would just go bad in my house). Finally, I always use the fresh cilantro but never have fresh chives around so I just use finely chopped green onion tops. Tastes fine to me.

I second the vote for Chipotle Slaw post by Bobmark. Maybe someone could post it -- I currently can't find my copy! BBQ ribs and this coleslaw is all I need! OH and a beer or two!

We like this one. It is not low fat, but it is creamy and goes great with bbq.

KFC Coleslaw

8 cups cabbage (approx one head) -- finely chopped
1/4 cup carrot (approx one medium) -- shredded
1/3 cup sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice
Be sure that the cabbage and carrots are chopped into very fine pieces (about
the size of rice kernels). Combine the sugar, salt, pepper, milk, mayonnaise,
buttermilk, vinegar, and lemon juice, and beat until smooth. Add the cabbage
and carrots and mix well. Cover and refrigerate for at least 2 hours
before serving.
NOTES : Another copykats.com recipe. My dad even likes this one. Instead of shredding the cabbage myself, I buy the pre-shredded coleslaw mix. One bag is usually just shy of 8 cups.

I love kfc cole slaw!
I make one with a ketchup base which goes real great on bbq sandwiches :)

Whole Foods' deli has a wonderful slaw called "Cabbage Crunch." I've made it several times and base these measurements on trial and error. Here are the ingredients:
coarsely chopped green cabbage (1 cabbage)
3 or 4 chopped green onions (white and green parts)
1/4 cup toasted slivered almonds
1 or 2 tablespoons black sesame seeds
dressing:
1/4 cup or so canola oil
1/4 cup or so apple cider vinegar
1 tablespoon honey (or more to taste)
kosher salt to taste
This is a really light sweet and sour flavored slaw, that looks as gorgeous as it tastes (w/ the black sesame seeds). Enjoy.

We love all kinds of coleslaw so I'll try just about any recipe I come across. However, the recipe I go back to again and again, I found on this BB. It was several years ago, and I apologize that I didn't write down the source. Whoever it was, thank you!!:)
Coleslaw
1-16 oz bad shredded cabbage with carrots
1/3 cup sugar
1/2 teas salt
1/8 teas pepper
1/4 cup milk (I use nonfat)
1/2 cup nonfat mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons cider vinegar
2 1/2 tablespoons lemon juice
Wisk dressing until sugar is dissolved and dressing is creamy. Add cabbage and carrots.

The one Peggy posted is the one I make most often also. It was posted by Grace som time ago, so I call it Grace's Coleslaw. The next runner up is Bob's Chipotle Slaw. I change Grace's up from time to time by adding apple or pineapple, nuts, craisins, etc.

I made this today and it is the best slaw I have ever tasted. I will no longer be looking for a recipe for slaw. I have one concern - is the caloric count of 929 per serving correct? Tell me it isn't so:confused:

I've tried the Asian Super Slaw (def. not for us--way too salty, rice vinegar was extremely seasoned apparently!), tried Grace's buttermilk recipe when she first posted it years ago (very, very tasty, but got runny/soupy real darn quick), Jane Brody's slaw recipe Bob's posted before, many others, and I always, always, always come back to the recipe I've used for 100 years. We have this several times a week. I think it's the sweet-tartness that is so good to us. Folks request this for cookouts and potlucks and call it "Joanie's German slaw" (our crowd doesn't get out much...). It's from a 1989 book by Cecil Dyer, "Best Recipes from the Backs of Boxes, Bottles, Cans, & Jars" book I've had forever.
Country-style Cole Slaw (makes 4 cups)
"This cole slaw reminds me of Mary Eisenman. Mary lived next door to me in Shreveport, LA, and was famous for her cold fried chicken & cole slaw Sunday night suppers. She probably got the cole slaw recipe from Hellmann's Best Foods as I did."
1/2 cup Hellmann's Best Foods Real Mayo (I use the 'light' version)
2 Tbs. sugar
2 Tbs. cider vinegar
3/4 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. celery seeds
4 c. coarsely shredded cabbage
3/4 cup. coarsely shredded carrots
1/2 c. diced green pepper
2 Tbs. sliced green onions.
In med. bowl, stir together first 6 ingredients. Add remaining ingredients; toss to coat well. Cover, chill at least 2 hours.
My Notes: I use the big bag of shredded coleslaw mix for the cabbage/carrots. And add ground pepper.

Grace's has been our "house slaw" for the last few years too. Good Stuff:D

Oh, I love my greatgrandmother's coleslaw dressing. Just on plain old shredded cabbage and carrots:
Grandma Dobson's Coleslaw Dressing
Serves 8
1/2 cup sugar
1 teaspoon salt
1 teaspoon mustard
2 teaspoons butter
1/4 cup vinegar
Mix all ingredients together in small sauce pan. Heat until butter melts and sugar dissolves. Cool and pour on salad.

Our favorite is my DB's mother's recipe:
1T grated onion
1/2 chopped green pepper
1T chopped pimento or red bell pepper
1/2 t ground mustard
1 t salt
ground pepper to taste
2T light corn syrup
1/2 cup vinegar
1/4 vegetable oil
1# bag coleslaw mix
1t celery seed
mix all but coleslaw
add coleslaw
chill
I put it in a tupperware and just shake it a few times between making it in the morning and serving at dinner.

This is the German style coleslaw that my mother used to make, and I also make it this way. Hate anything with mayo!

1 Medium Carrot -- Shredded

3 Tablespoons Canola Oil
6 Tablespoons White Vinegar
Salt and Pepper -- Freshly Ground
Shred the cabbage and vegetables, place in salad bow.
Add all other ingredients. Mix thoroughly. Cover and refrigerate for several hours for flavors to blend.

I am going to make the Chipotle Slaw for our Memorial Day Party. Since there is no number of servings indicated, how much do you think I should X this recipe for 20 people? I was thinking maybe 5 times??
Also, do you think with lots of appetizers (including hot links and grilled shrimp skewers), that just one salad is enough? I made two salads at our last party (about 40 people) and I swear everyone only ate meat and bread it seemed and I had TONS leftover. We are grilling burgers as the main dish.

Have been scouring the BB looking for a mayo-less cole slaw for a friend who's visiting soon who will not eat mayo in any shape or form (or casseroles or stews, very rigid about "separate" foods, :rolleyes: )! Cookinfor6, would you be able to post your tomato-based slaw recipe, please? Our favorite little bbq place has a red-based slaw that is sooo very good w/bbq, would love to see your take, if it's not too much trouble.

I don't have a recipe for my coleslaw because I made it up while attending Weight Watcher's but here are the ingredients:
Shredded cabbage & carrots
Cider vinegar
Non-fat yogurt (lemon, pina colada & pineapple are good)
Mayo - optional
Salt & Pepper
Celery seed - optional
Chopped apples (with a little lemon juice or OJ to keep them from browning) or canned pineapple chunks
I make this differently every time depending on what's in the cupboard, but it's good & lasts for days. And healthy!

Just a quick note: I made 2 slaws with the ribs recipe that was posted somewhere (I'll try to dig up the thread)...yum on the ribs and yumm on the slaws.
I think I have found my 2 favorite slaw recipes (that aren't asian style).

Joanieb, the mayo based one is wonderful as well.
OK, I can stop looking for slaw recipes :D :D

Thanks for the feedback, Wallycat!! Delighted that ancient fave recipe worked for your tastebuds! I just tried the recipe JeanneL posted upthread for a non-mayo slaw (w/o the black sesame seeds cause they're not to be found in these parts right now), and it was very good, too, with the sweet/sour twang we love in the mayo-based favorite, will be working this one into the rotation, too!
