I just cooked pork tenderloin in the oven and the only spice I used was the Galena Street Chicken & Rib Rub from Penzeys. It is delicious!!! I just rubbed it all over it and stuck it in the oven.

Sounds Great! I'm addicted to Penzeys Spices! I recently made a Pork Loin Roast with their Florida Seasoned Pepper, orange juice, and onions that was excellent.
I'll have to try the Galena Street Rub, I don't think I have that one. Thanks for the tip!

Thank you Sharon! I bought the Galena St. Rub but haven't tried it yet. I was wondering if it would be too sweet after I smelled it, but on pork that might be a good thing. Can't wait to try it now! http://www.cookinglight.com/bbs/biggrin.gif

I tried the Galena St. Rub too on pork loin and would also highly recommend. The back of the spice bottle suggested a bit a lime prior to the spice and I used a bit of mojo on it first. Very wonderful!!
Also had the Braised Leeks & Zucchini with the pork and that was just as good.
