Li'l Cheddar Meat Loaves



Amount Measure Ingredient -- Preparation Method

1 egg
3/4 cup milk
1 cup (4-ounces) shredded cheddar cheese
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 liter lean ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1 1/2 teaspoons prepared mustard

In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves. Bake, uncovered, at 350' for 45 minutes or until the meat is no longer pink and a meat thermometer reads 160'.

Had this for dinner tonight and it was excellent. Very moist.

This sounds yummy. Does this serve 8 and everyone gets their own little meat loaf? I have some minitature loaf pans that would probably work well with these. Thanks for posting.

Yes, could be 8 servings however, we each had 2 loaves, it was so good. And, yes, to the mini loaf pans. Read where someone did that very thing.

1/2 cup brown sugar??? Ouch! :(

Could this be cut down? The recipe sounds good, but the sugar scares me. :o

You could also bake these on top of a broiler pan...that way any fat would drain down and away from the loaves.

I haven't made it (but I did copy it), but I don't see why you couldn't. It is only in the topping, so you'd be determining how sweet it would be.

I had a recipe that used a similar topping, but I know it didn't have 1/2 cup of brown sugar. I'd start with 1/4 cup, taste it and increase if necessary.

I make these quite often and we love them! Wallycat, you could cut the sauce ingredients in half and be fine since it makes a large amount. We, however, like the full amount of sauce. :) I like to add a little ground chipotle to the sauce and I usually use extra sharp cheddar cheese. Oh, btw, this is a Taste of Home recipe in case anyone's interested in the source.

We made these for dinner. Delicious! I made half the sauce and it was plenty for us. I used a large muffin pan and it made six servings.
