I made two desserts this weekend from the May issue. The orange teacake which was absolutely delicious!!!! (I needed to add in more liquid to the glaze topping than called for though). I also made the double ginger cookies....I'm going to have them tonite but I sampled one and they are yummy, has a bit of a "bite" to it from both the crystallized ginger and the ground ginger, which I like. Anybody make either of these recently? Thanks Cooking Light for satisfying my sweet tooth this weekend!

Thanks...I did have my eye on these two and was curious about them. Tea cakes are nice to freeze, especially for unexpected company. I will be making this one soon! http://www.cookinglight.com/bbs/smile.gif

Do you freeze the tea cake with or without glaze? How do you defrost? I've frozen banana bread in 2-slice chunks and defrosted in the microwave.
