I made this today and wanted to share it with everyone since I enjoyed it so much!

Creamy Garlic-Red Pepper Dip

1 7-oz jar roasted red peppers, drained
1 tbsp balsamic vinegar
1/3 cup low-fat cottage cheese
2 cloves garlic, minced
salt and pepper to taste

Combine the red peppers and vinegar in a food processor. Puree until smooth. Add the cottage cheese, garlic, salt and pepper, then process until smooth.

Serve with vegetable crudite and/or pita triangles.

This was quick and easy... I am in the process of experimenting with appetizers and desserts that we might want to serve when we have guests over so, any ideas the rest of you might have, are wecome!! http://www.cookinglight.com/bbs/biggrin.gif
