I'm trying to get better with my side dishes, but it's so hard...

I am having the Baked Shrimp w/Feta Cheese this week and wondered what you serve with it.

I was thinking a green salad and bread, but that seems so boring. I would really like some kind of a veggie so I have something else to fill up on than just the pasta. But the question is, what veggie goes with pasta/shrimp/feta cheese?? A salad wouldn't be too bad if you had an interesting one.

Thanks in advance for your ideas & suggestions.

Christine

Steamed green beans seem like a perfect match for this dish -- maybe with a clove of garlic and a pinch of dillweed in the steaming water.

Browneye,
Mmmm! How long do the veggies take in the oven, and what temperature you use?
Thanks!

Or how about some roasted vegetables? I like to cut up zucchini, yellow squash, red bell pepper, onion, etc, toss with a little olive oil, season with fines herbes, garlic, and roast in a hot oven, stirring occasionally. Sometimes I toss them with Balsamic Vinegar at the end, also. Very yummy with greek/mediterranean dishes..
Good luck!
