Hey dons and doyennes of the BBQ:
In about an hour or so, we'll fire up the grill for the Jamaica Jerk Pork Tenderloin (May '01). CL says to just place it on a grill sprayed with cooking spray. Would it behoove me to wrap it loosely in foil or just let it go as is? I'm pretty certain it's going to take longer than 8 minutes each side- I've got about 2 lbs rather than the 1 1/2... help!

Just made this tonight with a 1 1/3 pound tenderloin (store had nothing larger). Ended up doing about 9 minutes a side, but I have an instant read thermometer to help get it to 160 degrees - after 8 minutes, it was only 156, & didn't want to chance it.
And I used no foil, just right on the grill.

Since I made this last night and since you are throwing it on the grill about now I thought I would write.
I wouldn't wrap it in foil. It will be just fine without it. As for the time, I would do it slightly longer than 8 min, maybe 10, but if you flattened it out like the recipe said, it should cook well. I have had a lot of problems with grilling pork tenderloin because my grill sucks, but this way worked fine. One side was a little pink still, but no biggie.

Thanks, Kerri and Ralph- the coals are turning ashen now, so the grill is just about ready for the pork.
The Gewurtztraminer is chilling, Bob Marley is singing, I'm roasting butternut squash, and the black beans are simmering on the stove. Here we go...! Julie
