Pasta Salad With Shrimp, Peppers, and Olives. We really liked this recipe, and I plan on making this again. I did make a few changes: I used 8 oz. of pasta, doubled the oregano and garlic, and added a little salt. I served it warm.

Salmon With Grainy Mustard-and-Herb Sauce. An EXCELLENT recipe, and it also looked elegant like a restaurant dish. My only changes were to use green onion rather than the shallots, and I used 1 t. dry chives rather than the fresh.

Cheesy Polenta Casserole With Roasted Bell Pepper Sauce. I won't make this dish again. It was just OK. I used garlic-and-tomato polenta.

Mediterranean Lasagna. Most of my family liked this recipe, but I'm not sure if I'll make it again or not. My only change was that I omitted the mint flakes.

Monterey Jack, Corn, and Roasted Red Pepper Risotto. Our whole family LOVED this recipe. I'm definitely going to make this again. I made no changes to this.
