I found this recipe in CL's Recipe Finder. It was my first attempt at risotto (after much deliberation of what kind to make), and it was yummmmmy! I was very pleased, especially since I had sworn off test-driving any more recipes with really expensive ingredients (and I paid $14 for a half pound of crabmeat to make this). I did make some slight changes: used vegetable broth instead of chicken, and omitted parsley since I'm allergic. After this success, I can't wait to try out some of the other risotto recipes on my list. Next one up is the leek and mascarpone cheese risotto.

Aggie, This crab risotto recipe sounds fantastic. It is hard to go wrong with crab. Glad your first experience with risotto was a positive one. Let us know how the leek and mascarpone risotto turns out.
