View Full Version : Chocolate Mousse: Eating my words...

...I think. Several days ago I posted an opinion on the chocolate mousse (cover, 5/01) which said that I found it quite disappointing, with an "off" taste. Well, I tasted it again, two days after I made it, and found that it was vastly improved. The "off" taste was gone and the texture was still very good! How can that be? I thought I was imagining things so I had my husband taste it and he also thought it was very good (he pretty much hated it the first day). I know that in some foods the flavor develops over a day or two, but this doesn't seem like it would be one of them. Anyway, if you made it and were disappointed, wait a day or two and taste it again. Gaye

I don't have a good explanation, but I do have a funny story about making the chocolate mousse over the weekend...I'm not too experienced in dessert-making so making a meringue was a pretty big deal. To make a long story short, when my DH walked into the kitchen after his run, he asked me why I had white specks in my hair and was trailing little strings across the kitchen. The specks were flecks of meringue b/c I forgot our mixer had a cover and the "strings" were the sugar syrup that I was stirring and then walked over to the mixer and then walked back to the stove. I don't have a good explanation, but I do have a funny story about making the chocolate mousse over the weekend...I'm not too experienced in dessert-making so making a meringue was a pretty big deal. To make a long story short, when my DH walked into the kitchen after his run, he asked me why I had white specks in my hair and was trailing little strings across the kitchen. The specks were flecks of meringue b/c I forgot our mixer had a cover so it was going all over the place when mixed on high and the "strings" were the sugar syrup that I was stirring and then walked over to the mixer with the spoon and then walked back to the stove--I guess I had made a little cobweb. But worth it! It turned out really well, even if I mis-read in my confusion four servings instead of eight so my poor tasters thought they were eating a very yummy "light" dessert and in the end discovered they had had two servings. Fortunately, there were no hard feelings, and usually I'm not such a flake!

And thanks to everyone for the earlier advice for minor adjustments to the recipe. I was skeptical about the tofu, too, so I added a 1/4 extra of choc. chips and an extra egg white, and the taste and texture were both great. I'm looking forward to the remaining serving at home in my fridge after the last post from GayeC.

That is hilarious! Although it didn't happen with this recipe, I have also had things "fly" out of my mixer and across the kitchen.

I didn't see the previous suggestion about adding another 1/4 c. chocolate chips and another egg white so am glad you mentioned it. I will definitely do that if I make it again and plan to eat it that day. Gaye
