hi!!

i am making a spinach salad tonight and am in need of a dressing that does NOT contain raw egg.

any recipes you would like to share would be wonderful

Buddie,

Here's one we use quite often. It's from
Santa Fe Lite and Spicy Cookbook. Pg 81

Hot Citrus Dressing (From Steaksmith Restaurant)

1/3 c orange juice concentrate
2/3 cup white distilled vinegar
1/4 c honey
1 cup water
1 tsp fresh ginger root, peeled and grated
1 dash white pepper
2/3 c garlic oil (smash 3 cloves of garlic
into oil--I use olive oil)
In a medium saucepan place the orange juice concentrate, white vinegar, honey, water, ginger, and white pepper. Bring the ingredients to a simmer, and mix them together.

While whisking constantly, slowly dribble in the garlic oil.
Makes 3 cups.

**I also have the Steaksmith Spinach Salad recipe if anyone is interested?

I have a great hot spinach salad dressing recipe with only 2 ingredients! I love it! Just mix equal amounts of orange marmalade with white distilled vinegar. Adjust to taste and microwave until bubbly. That's it! It's sweett and tart and hot and fat-free.

I know this is late for you - but this recipe is all of my family & friends' favorite for spinach salad.

Spinach Salad with Parsley Dressing

Fresh Spinach
Jarlsburg Cheese, Shredded
Cooked Bacon, Crumbled (I used Turkey Bacon)

Parsley Dressing
½ Cup Sugar
½ Cup White Vinegar
2 Tbsp. Olive Oil
1 Tbsp Green Onion
1 Tsp. Worstershire
1 Tbsp. Fresh Parsley
1 Tsp. Yellow Mustard

Mix all ingredients well. Pour over spinach, cheese, and bacon just before serving. Toss well.

Sounds great. I plan to make it.

Could you tell me how much spinach, cheese and bacon you use? How many servings do you get? Do you use baby spinach?

I know you posted this recipe for the dressing mainly, but I am new at making "real" salads so I'd like some guidelines. (normally when I make salads I put some prepared greens into a bowl, throw in chopped tomatoes and put bottled dressing on top. not too impressive.)

I like to make a simple honey mustard and then toss the spinach with some crumbled bacon, sliced hard-boiled egg, and chopped tomato.

For the dressing, I use:

1/3 to ½ cup honey mustard (I can only find this at one upscale grocery)
3 tbs. light mayo
3 tbs. light sour cream
splash apple cider vinegar
dash sugar
generous dash pepper

Mix together and toss with salad in whatever amount you choose. It'll keep 'till the expiration date of the sour cream.

This is a wonderful salad. It's from the Willimas Sonoma cokbook "Salads"

Spinach and Apple Salad with Bacon

2 medium apples
a few drops of fresh lemon juice
1/4 pound sliced bacon
1 tablespoon dijon mustard
2 tablespoons balsamic vinegar
salt
white pepper
1/4 cup extra virgin olive oil
1/2 pound spinach, stemmed and washed
12 whole black olive, pitted and chopped

1. Peel the apples, if desired, then core and chop. Place in a bowl, sprinkle with the lemon juice and toss lightly; set aside.

2. In frying pan over medium-high heat. fry the bacon until crisp, about 5 minutes. Transfer to paper towels to drain. Cut into small pieces and set aside.

3. In a small bowl stir together the mustard and vinegar, salt and white pepper to taste until well mixed. Add the oil and stir vigorously until well blended. Set aside for a few minutes to allow the flavors to blend.

4. Place the spinach leaves in a salad bowl. Add the apples, bacon, olives and dressing and toss well.

I'm such an "eyeballer". Pretty much - I use a bag of spinach - baby preferably b/c it tastes better & you don't have to worry about stems so much. I probably grate up a 1/2 cup of cheese & have about 3-4 slices of bacon crumbled. I think I normally have some leftover dressing - but be generous & let everything get coated. If it looks like you have too much or too little of cheese or bacon - take some out or add more. That's probably not a ton of help - sorry. It's hard to mess up though. The recipe is really good.
As far as servings go - I'd say about 4 or 6 per bag - depending on how big the salads are. I'd look on the bag & see how many servings they say they have.

Alot of times - I'll just make up the dressing (& keep it in the fridge like any other dressing), crumble some bacon & shred some cheese - & we eat it when we want to - as opposed to pre-making it b/c the dressing will wilt the spinach & get gross overnight.

Go ahead & pre-mix for a party though.
