That's it - I want the easiest pie recipe there is (that also tastes good http://www.cookinglight.com/bbs/smile.gif). It doesn't have to be light either. I've never tried to make a pie - but I'm having a party soon & thought I'd give it a shot.
Thanks.

The Fresh Strawberry Pie from last year is really easy and delicious. It was the first fruit pie I made. You can even buy a premade crust if you want, but the crust in the recipe is really yummy if you take the small effort to make it. You should be able to find the recipe in the search. If not, I can post it for you.

I'm at work and don't have the exact recipe or the CL issue, but the Caramel Apple Pie was so easy and WONDERFUL!! You might be able to find it under 'search'. Truly different from any other apple pie recipe I've ever tasted, and made a wonderful presentation. Got rave reviews! http://www.cookinglight.com/bbs/biggrin.gif

I had never made a pie until last year. The first pie I had ever made was my mom's "Very fast strawberry pie". You can throw it together in very little time and it is very good. The crust is made with the Pillsbury refrigerated crust that you just unfold in your pie plate and then bake. I don't know whether or not you are looking for homemade pie crust. Just let me know and I'll post the recipe!!!

I'd rather skip the homemade pie crust - I've never been very good at breads/crusts. Just the filling part would be great & then maybe any tips on type of crust to buy & a way to spruce it up if there is a way. (I've heard you can wipe egg over the top to make it flakier?)

If you do a search, you will find Browneye's thread: "for the piecrust challenged" and she has posted some really good looking fruit galette recipes. I have not yet tried them but I really want to.

I would post the link but I am "challenged" http://www.cookinglight.com/bbs/redface.gif in that area.

My favorite easy pie (especially spring and summer) is one of CL's Key Lime Pie recipes. I imagine you could think of that as a fruit pie, no?

I'm at work and don't have the issue in front of me, but it was a couple of summers ago and had some sort of a quick bread recipe on the cover. Anyway, it starts with a premade lf graham cracker crust and takes less than 15 minutes to put together, including grating the lime zest!

Well, I actually have made key lime pie before & it is easy & yummy. I might make that now that I am reminded of it. I was thinking more along the lines of apple, blackberry, strawberry, blueberry, etc.

For pies - can you just substitute one fruit for another? (I'm guessing no, but I'm not sure why.)

I made the apple tart from last month or two from the french cooking section - I used a premade crust. It was easy, easy, and very good. Sprinkled w/some cinnamon and a little sugar.

This is a really easy pie, and very good.

Baptist Pie (I don't know why it has this name)

1 small can frozen lemonade
1 can Eagle Brand Milk
1 small can crushed pineapple, drained
1/2 C. toasted pecans
1 small can mandarin oranges, drained
3 C. Cool Whip
graham cracker crust

Mix lemonade, Eagle Brank Milk and Cool Whip. Fold in fruit and nuts. Pour in crust and chill. I usually make a homemade graham cracker crust using the recipe on the box of graham cracker crumbs, and I think it is easy. But, I know you can by them pre-made. To toast pecans, just put them in a pan and toast them in the oven for about 8- 10 minutes at 350 degrees. Stir occasionally to make sure they don't get too brown. Or, you can skip the toasting all together if you want to.

If you want to make a pie using a regular pie crust, I think the Pillsbury ready made pie crust in the red box is pretty good. You can find in the section of the grocery store where they have canned, refrigerated biscuits.

The crust for the Fresh Strawberry Pie is actually just a cookie crumb crust. VERY easy! I, too, am terrible at pastry crusts. This is not even in the same ballpark! Again, though, you can just buy a premade nilla wafer or graham cracker crust at the grocery store.

Hmmm. I guess you are looking for pastry crust pies, though, or you would not have made that comment! So, I am not much help. But I do assure you that this pie is yummy. http://www.cookinglight.com/bbs/wink.gif

Strawberry Pie

1 prepared gram. pie crust
bananas
2 pints strawberries
strawberry gel
cool whip

Slice and line bananas in crust. Slice and mix strawberries with gel. ( Marie's has the jar gel) Pour on top of bananas. Serve topped with cool whip.

Easy! A family favorite, and this is a great time of year for it. Not mother's day without it!

You are a help! Grahm cracker crust is fine with me - I've even made one of those before!

When you say eagle brand milk, do you mean sweetened condensed milk?
Thanks!
