I made a few things of the 17 I tore out of the book to make. The Curried Rice Salad was great with a shrimp marinated in wine and fruit salad I made. There were so many colors on the plate
Also, I made the Date Cake from the hidden Soy section. The teacher's I teach with loved it...I told them later what was in it. They were shocked. Great Job Cooking Light. Has anybody done the Choc. Mousse on the cover. It sounds complicated

It was one of the best and simplest things I have made. You don't need a candy thermometer. Just put a dish of ice water by the stove. The sugar syrup is ready when it makes a soft "blob" when you drop a little into the water. (the stage before this is when it makes a thread). The mousse also seems to taste better the more days it sits.
