In an earlier post I mentioned that Cooking Light created a lighter version of one of my family's favorite recipes. Although this was ten years ago, they still do this. If you go to the HOME PAGE of Cooking Light, you will find a link to "We're Looking for Recipes to Lighten." I highly suggest, if you have a favorite recipe that needs lightening, that you submit it to Cooking Light. It was a fun experience, and I even received a copy of their annual cook book! Don't know if they are still offering that as a "prize," but it was a fun experience any way.

3 ounces Neufchatel cheese
vegetable cooking spray
1 teaspoon vegetable oil
2/3 cup sliced fresh mushroom
1/2 cup chopped onion
1/4 cup all-purpose flour
2 tablespoons all-purpose flour
3 cups 1% low-fat milk
1 egg yolk -- lightly beaten
1/4 cup sherry
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon dry mustard
1/8 teaspoon paprika
dash ground red pepper
2 cups lobster meat -- coarsely chopped (two 8-ounce lobster tails)
1/2 pound lump crabmeat -- drained
3 cups hot cooked long grain rice -- (cooked without salt or fat)
paprika -- optional
lemon twists -- optional
fresh parsley sprigs -- optional
Freeze cheese 15 minutes or until firm; cut into 1/4-inch cubes, and set aside.
Coat a large skillet with cooking spray; add oil, and place over medium-high heat until hot. Add mushrooms and onion; saute until tender. Add flour; cook 1 minute, stirring constantly. (Mixture will be dry and crumbly.)
Combine milk and egg yolk in a bowl; stir well. gradually add to flour mixture, stirring well. Cook over medium heat 15 minutes or until thickened, stirring constantly.
Add cheese, stirring with a wire whisk until smooth. Stir in sherry and next 6 ingredients; reduce heat, and simmer 3 minutes, stirring constantly. Add lobster and crabmeat; simmer an additional 8 minutes or until lobster is done, stirring frequently. Serve over rice. Sprinkle with paprika, and garnish with lemon and parsley, if desired.
Serving size: 1 cup lobster mixture and 1/2 cup rice.

In addition to its high calorie count, Deanna's recipe was steep in sodium and fat. The main culprit was the sauce, which included butter, whipping crea, and two packages of a commercial hollandaise sauce mix. the sauce mixes alone contributed 32 grams of fat and 2,320 milligrams of sodium.
We developed a silky sauce with the rich, lemony taste of traditional hollandaise sauce by using Neufchatel cheese and seasonings. Neufchatel cheese is similar to cream cheese, but contains one-third less fat. Cut well-chilled cheese into small cubes; let them come to room temperature, and stir into the sauce to ensure smooth texture.
