I am unable to locate this ingredient, and several others needed for the recipes in the 15 min cooking light cookbook. Does anyone have any ideas?

Chef Cindy and Missi,

The recipe in question is called Chicken Alfredo Pasta and the ingredient that DUAN can't find is Chicken Alfredo Style Soup. I think you were both a bit confused, as I was, until I looked up the recipe.

Here it is...

Chicken Alfredo Pasta

5 1/2 ounces Rotini, uncooked (2 cups)
1 10-ounce package mixed frozen vegetables
1 9-ounce package frozen cooked diced chicken breast
1 15-ounce can low-fat chicken alfredo style soup
1/4 cup grated parmesan
1/2 tsp. salt
1/4 tsp pepper

Cook pasta and vegetables together in boiling water in a dutch oven for 10 minutes.

Drain pasta and vegetables; return to dutch oven. Add chicken and next three ingredients to pasta mixture, stirring well.

Cook over low heat for 2 minutes or until thoroughly heated. Sprinkle with pepper.

yield: 6 (1 cup) servings

253 calories (14% from fat)
3.8g fat
2.8 g fiber

You may want to try healthy choice soup for this ingredient (15-ounce can low-fat chicken alfredo style soup).

HEALTHY CHOICE DOES NOT HAVE ANY ALFREDO SOUPS. THEY HAVE ALFREDO SAUCES---IS THAT WHAT THE RECIPE IS CALLING FOR?

DAUN,

Healthy Choice did make an alfredo soup a couple of years ago. They also made a very good corn soup, which I cannot find any more. I think the ingredient that you are looking for is a can soup.

I guess that is the problem with cookbooks that rely heavily on pre-packaged or prepared ingredients. If those items are discontinued, you are out of luck. Sometimes you can find a substitute. But in this particular cookbook, since there are so few ingredients in each recipe to begin with, the pre-packaged item is an essential component. http://www.cookinglight.com/bbs/frown.gif
