I went to a restaurant recently and they served a salad dressing that was so good but I have not been able to duplicate it. When I asked about it they just said it was made with lemon juice and olive oil. It has to be very simple I'm sure but so far what I have tried to make just does not taste the same. Has anyone ever made a dressing that included these ingredients?

I haven't made such a dressing for a green salad, but I love this couscous salad from Near East, and it's dressed with just lemon juice and olive oil:
MEDITERRANEAN COUSCOUS SALAD
1-1/2 cups water
1/4 teaspoon black pepper
1 cup NEAR EAST Original Plain Couscous
1/4 cup lemon juice
3 tablespoons olive oil
2 large tomatoes, chopped
1 medium zucchini, halved and sliced into 1/4-inch pieces
1/2 cup loosely packed shredded fresh basil leaves
1/3 cup sliced green onions
3/4 cup crumbled feta cheese
In medium saucepan, bring water and pepper just to a boil. Stir in couscous; cover. Remove from heat; let stand 5 minutes. Fluff couscous with a fork; cool, uncovered 10 minutes.
In large bowl, combine couscous, lemon juice and olive oil. Add tomatoes, zucchini, basil and green onions. Chill 4 hours or overnight. Stir in cheese before serving. Serve on lettuce leaves or as a filling for pita bread.

I make this BC recipe all the time. Couldn't be simpler!
LEMON VINAIGRETTE
1/4 cup freshly squeezed lemon juice (about 2 lemons)
1/2 cup good olive oill
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Whisk all ingredients together in a small bowl.

Manetta, Looking at your recipe I don't think I was putting enough lemon juice in the dressing. I will try yours tomorrow.
Canice, this salad looks wonderful. I love Couscous and have added this to my list of things to make.
