Hello everyone,
I am a new reader to CL. I am 19, and i have a daughter who is 14 months old. I just thought i'd introduce my self before i go on...

I am in search of quick and healthy breakfasts, not big meals like on the weekends. Just quick ideas for weekdays. I tried doing a search on "breakfasts" and although some yummy looking recipes came up (like the SW Casarole) the results weren't things you could eat every day.

I love little mini crustless quiches. They are less trouble then they sound: I toss the fillings into greased muffin tins (like onion, tuna broccoli or chicken and green onion). Then you pour in a milk/egg white type mixture and bake. It really doesn't take much time.

They freeze well, and heat in the microwave in less than a minute. The protein helps me get through the morning. They can also be sliced for a sandwich or top toast.

I love eating cottage cheese and fruit for breakfast. There's an item in grocery stores called cottage doubles you can buy. Very tasty!

If you have a freezer and a microwave, you are all set! I make pancakes, waffles and muffins when I have time, and then freeze them in zip lock bags. Pop them in the microwave and you're done!

Welcome, Kylie! If you like muffins, I can post the recipe for CL's Blueberry-Lemon Muffins. I make them often. They take only 15 minutes or so to put together, and they freeze well so you can make them on the weekend and pop in the microwave on a weekday morning. Smoothies are another great option, especially since fresh fruit will be in season soon.

Hi Kylie,

My SO and I are on a smoothie kick... toss three or four one-inch chunks of banana and four or five large frozen strawberries into the blender. Pour in enough oj to come up a little below the 2 cup mark on the blender cup. Scoop in some vanilla or strawberry yogurt. Add a spoonful or two of wheat germ if you have it. Blend and enjoy!
We have done lots of experimenting with other fruits too... cantaloupe, blueberries, etc. If you use frozen fruit, you don't need ice cubes to make the smoothie thick.
