I have been so busy that I haven't been able to post in a while so here are reviews of the recipes I have tried recently:
-Vegetable Lasagna: IMO this was more trouble that it was worth. My family thought it was bland. It also turned out runny. I will not make this again.
-Florentine Frittata: LOVED THIS ONE! Although it took forever for the eggs to set up, it was well worth it! The leftovers were even better the next day. Very generous servings.
-Crispy Zuchinni Coins: I found this recipe on the CL recipe search. This is a delicous way to prepare zuchinni. I served these with Boca Burgers and they made the perfect side dish. They kind of reminded me of fried dill pickles.
-Sausage and Hominy Chili: I made this today in my slow cooker, very quick and easy to prepare. We had it for dinner tonight and thoroughly enjoyed it! I used medium salsa and it was still really spicy. I also used smoked turkey sausage because I am unable to find the chicken sausage.

I can't seem to find the recipe for the Sausage and Hominy Chili, could you please post it. It sounds great.
eks - where can I find the Crispy Zuchinni Coins recipe??? Sounds like a good way to serve zuchinni and have a "different" type of side dish!!!

It took a little digging, but I believe this might be the recipe for the Sausage & Hominy Chili that eks is referring to.

Both these recipes sound good to me, so I kept digging. Here's the zucchini coins recipe:

Crispy Zucchini Coins
Recipe By :
Serving Size : 4 Preparation Time :0:00
Categories : Oct '97 Vegetables
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup Italian-seasoned breadcrumbs
3 tablespoons grated Parmesan cheese
1/4 teaspoon pepper
3 cups thinly sliced zucchini (about 1 pound)
2 egg whites -- lightly beaten
Cooking spray
Preheat oven to 450º. Combine first 3 ingredients; stir well.
Dip the zucchini slices in egg whites; dredge in breadcrumb mixture. Place zucchini in a single layer on a baking sheet coated with cooking spray.
Bake at 450º for 20 minutes. Turn zucchini over; bake an additional 15 minutes or until outside is crispy and browned.

Thanks so much kentgirl for posting these recipes.
After reading this post, I too thought the Crispy Zucchini Coins sounded wonderful. I made them last night but I'm not sure I did it quite right. I followed the directions but it made a lot so they were on top of one another in the pan. Eks my question to you is did you make them in just one layer? Did all of yours turn our nice and crispy? I think when I make this one again, I'll try making it so they're just in one layer rather than them being on top of one another.

hka-I did arrange the zuchinni in a single layer and they all turned out good and crispy. I also cut the slices very thin so maybe that helped. I am sorry these didn't turn out for you, I hope you give them another try!

I made the Crispy Zucchni Coins last night and they were a hit in my house! They reminded me of a fried zucchini appetizer without the grease. Very tasty. I baked them in a single layer in two 9x13 baking pans. Served them with fat-free ranch dressing on the side and they disappeared quickly.
