Has anyone tried the Penne with tofu-basil pesto?

I've had this several times and its pretty good. I can't taste the tofu at all. It's just got a different texture from regular pesto, its very creamy. Still tastes good, just don't expect that oily texture of regular pesto. The leftovers aren't as good - it doesn't seem to do well in the frig, it sort of gets too thick but that won't matter if you're eating it right away. I don't like it as much as regular pesto but I feel a lot better about eating it!

I think it is a little late, but if anyone else is interested, I think this is a great company recipe. This is one of my favorites. I made it for my mom (not very daring) and my sister (more daring than Mom) and they both loved it and didn't taste the tofu.

This was great! I am so glad I made it...my friends loved it and there was leftoevers for my lunch...yummy!
