I've been trying a few recipes calling for dark sesame oil.
I've never seen any oils in the store referred to as "dark". I have seen some "black" sesame oil at the Asian market, but that's the only reference to color I've seen. I have two bottles of sesame oil, one from Trader Joe's and one Kadoya. They both look dark to me because they're toasted, but I'm afraid I might be missing out on some great flavor due to my ignorance. ???????

I use the toasted sesame oil if a recipe calls for dark. The light sesame oil looks like a vegetable oil. If yours is darker than that, then you have a dark oil.

Okay, thank you. I have seen the clear, lighter sesame oil in the store. I just always thought of them as "toasted" and "untoasted".
So I guess it's just a matter of semantics, and now I know. :)
