I have maybe 3 ounces (or a little less) left from the caramelized onion and blue cheese orzo I made last week. Not enough to do a lot with, but I can't think of anything at all. Suggestions?

Stir some powdered sugar into it and dip strawberries in it. :)

Toast the bread, then spread a layer of mascarpone on the bread. Top with thinly sliced pears and drizzle just a little bit of balsamic vinegar on top.
I had this at a restaurant once and can't stop making it at home.

Active time: 15 minutes | Total: 15 minutes | To make ahead: Prepare the sauce (Step 2), cover and refrigerate for up to 2 days or freeze for up to 1 month. To reheat, microwave on High for about 1 minute (defrost first, if necessary).
Astoundingly good for minimal effort, this makes an indulgent weekend breakfast or anyday dessert. A judicious smear of mascarpone (half the fat of butter) is part of the luxury, but even lighter low-fat cream cheese will work as well. The real secret is warming the berries just enough to make the flavor bloom and transform their juices into a rosy syrup.
4 thick slices whole-wheat bread
6 tablespoons light brown sugar
1 teaspoon grated lemon zest
2 teaspoons lemon juice
3 cups sliced or diced hulled strawberries
4 tablespoons mascarpone (Italian cream cheese)
1. Toast bread in a toaster.
2. Meanwhile, heat a large skillet over high heat. Add sugar, lemon zest and lemon juice and cook, stirring, until the sugar melts and the mixture begins to bubble, 30 seconds to 1 minute. Add strawberries and stir until juices begin to exude and the berries are heated through, 30 seconds to 1 minute more.
3. Spread 1 tablespoon mascarpone on each piece of toast. Top with the warm berries.
Makes 4 servings.
Per serving: 203 calories; 5 g fat (2 g sat, 1 g mono); 9 mg cholesterol; 40 g carbohydrate; 4 g protein; 4 g fiber; 153 mg sodium.

Apple Marscapone Parfaits

1 tablespoon butter
4 cups Granny Smith apple -- diced
1/2 cup brown sugar
2 tablespoons lime juice
2 tablespoons water
1/2 teaspoon ground ginger
1/8 teaspoon salt
2 cups lowfat cottage cheese
1/4 cup marscapone cheese
1/3 cup sugar
1 teaspoon vanilla
Saute apple-salt in butter 12 mins, or until liquid is almost absorbed. Take off heat. Puree cottage cheese. Add marscapone-vanilla, puree until smooth. Spoon 2 tbs into each of 6 parfait glasses, top with 2 tbs apples, then 3 tbs cheese and 2 tbs apples, 3 tbs cheese. Cover and chill at least 4 hours.

Smoked-Salmon Pizza with Mascarpone and Capers
From Cooking Light
Mascarpone is a rich, buttery cheese with a delicate, creamy texture.
3 cups bread flour
1 cup warm water (100ˇ to 110ˇ)
1 tablespoon olive oil
2 1/2 teaspoons bread-machine yeast
1/2 teaspoon salt
Cooking spray
2 cups sliced green onions (about 2 bunches)
1/2 teaspoon cracked black pepper
6 tablespoons (about 3 ounces) mascarpone cheese
6 ounces thinly sliced smoked salmon
1 tablespoon capers
6 lemon wedges
Lightly spoon flour into dry measuring cups; level with a knife. Follow manufacturer's instructions for placing flour and the next 4 ingredients (flour through salt) into bread pan, and select dough cycle; start bread machine.
Remove dough from machine (do not bake). Turn the dough out onto a floured surface, and knead for 30 seconds. Cover dough; let rest 10 minutes.
Preheat oven to 425ˇ.
Divide dough into 6 equal portions. Roll each portion into a 9-inch circle on a lightly floured surface. Cover baking sheets with parchment paper, and place dough rounds on pans. Lightly coat top of dough with cooking spray. Cover and let rise in a warm place (85ˇ), free from drafts, 15 minutes or until puffy.
Divide the onions and pepper evenly among dough rounds. Bake at 425ˇ for 10 minutes. Remove from oven; drop 3 teaspoonfuls of cheese onto each round. Arrange 1 ounce smoked salmon on top of each pizza, and divide capers evenly among pizzas.
Bake the pizzas an additional 8 minutes or until the cheese melts. Serve pizzas with lemon wedges.
Yield: 6 servings (serving size: 1 pizza)

Marscapone is an amazing thing to use to finish off a risotto.
Anything with spinach would be fantastic.
A risotto primavera with some of the great in-season veggies would be memorable as well...

I put it in a bowl, add sugar and put it on a plate and eat with fresh berries. It is amazing and everyone thinks it is so fancy! ;)

This recipe serves 8 so if you halve it you should have enough!
BAKED SALMON STUFFED WITH MASCARPONE SPINACH
Serve with pan-fried potatoes. What to drink: A crisp Sauvignon Blanc from California or New Zealand, or a French Sancerre.
1 10-ounce bag fresh spinach leaves
1/2 cup cream cheese (about 4 ounces), room temperature
1/2 cup mascarpone cheese,* room temperature
Pinch of ground nutmeg
8 6- to 8-ounce salmon fillets with skin (each about 1 inch thick)
Olive oil
2 2/3 cups fresh breadcrumbs from French bread with crust
1/2 cup (1 stick) butter, melted
1/2 cup freshly grated Parmesan cheese
Cook spinach in large pot of boiling water just until wilted, about 30 seconds. Drain; rinse with cold water. Squeeze spinach dry, then finely chop. Place in small bowl. Mix in cream cheese, mascarpone, and ground nutmeg. Season to taste with salt and pepper. Cut one 3/4-inch-deep, 2 1/2-inch-long slit down center of top side of each salmon fillet, forming pocket for spinach mixture. Fill each slit with spinach mixture, dividing equally among salmon fillets. (Can be made 4 hours ahead. Cover and chill.)
Preheat oven to 450°F. Brush rimmed baking sheet with olive oil. Sprinkle salmon fillets with salt and pepper. Mix breadcrumbs, melted butter, and Parmesan cheese in medium bowl. Top each salmon fillet with breadcrumb mixture, pressing to adhere. Place salmon fillets, skin side down, on prepared baking sheet. Bake salmon until opaque in center, about 12 minutes. Transfer to plates and serve.
* Italian cream cheese sold at Italian markets and also at many supermarkets.
Makes 8 servings.

I love the Smoked Salmon Pizza recipe that Lisa posted. Another similar idea is to make smoked salmon quesadillas, using mascarpone cheese and freshly snipped chives or green onions. I made these for a party one time and everyone loved them.

I was inspired by your mention of spinach so I was going to play around with a cheesey spinach spread to put on crostini...but then got too involved in another recipe and ran out of time :( . But now I'm thinking maybe the quesedilla - yum! Anything I should know about making them?
BTW, Stacy, that recipe is so nice! Been in my to-try file for ages so why the heck haven't I made it??

I actually used an old CL recipe for inspiration. Just take a tortilla (CL called for fat-free, but I used regular), spread a little mascarpone on one side of it, sprinkle with freshly chopped chives, and layer with a little bit of smoked salmon. Fold tortilla in half. Coat your skillet with cooking spray, and pan-fry the quesadilla until the outside of the tortilla is golden. Flip and brown the other side.
That's pretty much it! :)
