I would like to mail some dessert treats to my mom for her birthday. Any suggestions for items that will travel well during the summer. My first thought is BC lemon pound cake (without the lemon glaze) and raspberry squares. I am also considering the lime coconut squares that have received great reviews. (I have never made these.)
TIA

Personally, I would hesitate to send anything through the mail right now nearing the peak of warm/hot weather. There is really no way to know what kind of temperatures the package would be exposed to, but it's a safe bet that it wouldn't be cool. The quality of your food could really suffer by the time it arrives.
I think your safest bet would be a rather dry treat such as cookies (no chocolate chips) as opposed to cake or fruity things. Biscotti might work well. What about sending her one thing now with a promise of one thing a month for the next several months or something like that?

I have to agree with Kathy. Temperatures are soaring around here right now and I wouldn't want to receive a package of food that had been sitting in the heat too long. I definitely wouldn't recommend the coconut lime squares for shipping.
The sentiment is nice. Recently there was a thread listing the best mail order places for treats. I can't remember what it was called but maybe you could search and let the professionals...who assume responsibility for their products in the mail...deliver something special to your mother for her birthday.
