I am going to be making Psycho Chicken today, and I know that a lot of you have made this before. Did you remove the skin of the chicken either before or after cooking, or did you just remove it from pieces individually on your plate as you ate it?

This chicken is SO good, I'd encourage you to eat it -- skin and all. (I do...)

I'd definitely encourage you to at least wait until it's on your plate, however, if you're going to skin it. The skin is part of what keeps the chicken juicy in the oven.

I did not remove the skin before cooking. I served it with the skin on to let each person decide it they wanted to eat it.

I Shower-Hacked it and roasted it with the skin on, then removed the skin before serving. We may be different, however, we've never been that interested in 'presentation' on the table since it's just the two of us. We usually carve off a few servings of the meat and put it on a serving plate before bringing it to the table to alleviate that awkward 'carving at the table' thing. If presentation is important, I'd agree with Susan and say let each person decide on their own...but that skin is DEFINITELY important to hold in moisture while cooking, let alone add flavor!

I don't usually remove the skin, but should for fat/calories sake. I made 2 of these last weekend as we got together with friends, there was nothing left! Everyone loved it, even the kids!

It's a play on words, Searcher. I call it Psycho Chicken because the chicken is hacked all over with a knife before slathering the garlic mixture on. Psycho. Shower scene? Shower-hack, see..?

Boy oh boy. I'm posting at the same time with everybody today...

and by the by, you are ALL correct. The dish was not intended to be cooked without the skin. Eating the skin is completely up to you-- I don't, but if someone else wants to, it's fine.

Just for kicks I did a search for "psycho chicken" on this bb, and it came up with 20 hits.

Gail, I love your sense of humor, and our family really enjoyed the chicken. I cooked it with the skin on, but ate it with it off. YUM. Thanks so much for sharing this recipe.

I did use a larger chicken, so I needed to cook it an extra half-hour to get the juices running clear.

OK, that's it...I'm going to buy a chicken tonight!!! I've got a wonderful Savignon Blanc I've been waiting for an excuse to open - this is it!

The chicken was sooo juicy and the aroma filled the whole house. And it was pretty fun hacking the chicken up!-what a bonus with the recipe you know! It is definitely a keeper.
