I love steamed artichokes, too! I usually make a dipping sauce out of ff mayo, lots of lemon juice, a touch of dijon mustard, and perhaps some dill. Adjust to your own taste, of course! It's light and tastes great!

I always make a dip with non-fat mayo and lots of curry. My Mom always served artichokes with this dip.....so good!

I dip in seasoned rice wine vinegar (it comes with the seasoning, I don't add anything). I use this kind of vinegar for all kinds of things, including as a light salad dressing all on its own.

I use xtra virgin olive oil with lots of garlic and italian spices and some kosher salt mixed together--a little goes a long way.

I use fat free mayo w/a squeeze of lemon juice and cajun seasoning.

Mmmmm...
While I still hope to find the dill & yogurt dip, these sound great! I don't know where to start ... the store has them on sale ... I think it's 6 for $1.99 ... maybe I'll buy six.
Thanks, as always.

i accidently discovered this and hubby and i love it.

in the fish section there is a lemon/dill sauce for fish. (in a clear bottle with a blue label) they have a fat free version and it is pretty yummy to heat up and dip artichokes in.!! http://www.cookinglight.com/bbs/biggrin.gif

For cold artichokes,I used to do curry and mayo, but now I do curry and plain yogurt, with maybe a dollop of low fat mayo mixed in. My kids and I just eat hot artichokes plain, with nothing, and they are great!

I have always steamed artichokes and served them with lemon & butter (which is why I've sworn off them lately). I just wanted to know whether anyone has anything else they like to use for a dip with artichokes. For some reason, the smashed potatoes I found in a search don't appeal to me. I have a friend that said she had a yogurt & dill dip recently with artichokes and that sounds good if anyone has such a recipe. TIA -- I know I can always count on you guys!

I dip them in a variety of things - lemon & butter, garlic & butter, & now the light one - balsamic vinaigrette. Very tatsy in all of the above. Good luck finding the yogurt one!

I finally got around to making these ... I mixed some low-fat mayo, curry powder, and a little ketchup (for a little flavor and color -- my mom used to make this exact dip when I was younger). It was great on the artichokes! Now I have some dip left for veggies. Thanks to all for suggestions -- I can't wait to try some more.

Funny you should ask, I have had artichokes twice in the last week and came up with a really nice sauce to go with them.

I don't measure anything, just put it all in to taste

Dijon mustard
Buttermilk
Rice vinegar or lemon juice
1 clove crushed garlic
salt and pepper

This is soo yummy and is perfectly easy to make!
