I wing it depending how many eggs I have hardboiled. I add chopped celery, some celery seed, and a pinch of dry mustard. After I mix this and the eggs together, I add mayo, until I get the right consistency.

I like very basic egg salad. Eggs, Duke's mayo, and Lawry's seasoned salt. This is the only time I use Lawry's, but I love it in this.

Sometimes, I add chopped green olives and just a wee bit of olive juice. In that case, no Lawry's, but I add salt and pepper.

I make mine the same way Sami does but add a little finely chopped onion too.

A little cream cheese makes it denser and richer - good for spreading on pumpernikel bread for finger sandwiches! Also some minced red bell pepper. Otherwise, just chives, dry Colemans mustard, celery and mayo..... I think.

Here is our favorite. The bacon is what makes this special.


Dinah Shore's Egg Salad

6 hard cooked eggs, diced
2 sweet pickles, diced
3 slices bacon, cooked, drained and crumbled
Mayonnaise, enough to bind mixture
salt and fresh ground pepper to taste

Combine all ingredients.

I don't use mayo in my egg salad. I think Russian dressing is alot tastier!

Our hands-down favorite is a Moosewood recipe called Nepalese Egg Salad - I think it was posted on this board at some point...

I usually wing it depending on what we have on hand. From time to time I make it with chopped celery, minced chives, capers, mayo, salt, pepper and a teaspoon or so of horseradish. This is the way my DH likes it best. Guess I know what I'm having for lunch today!:)

Mmmm...egg salad...I mix together the following:

Good mayo
Chopped green onions or green peppers--sometimes a little shallot
Dijon mustard
A little salt & pepper--sometimes a sprinkle of herbes de Provence
Some chopped olives if DH won't be eating it
A few drops of truffle oil

Serve on good bread w/ a nice piece of lettuce

I keep truffle oil in my pantry just to put it in my egg salad. Transcendant.

finely chopped green onion tops
finely chopped bok choi (grows better for me than celery)
finely chopped red chard stems
curry
mayo/yogurt blend

if I am making it for my kids I skip the curry and add olives, a touck of black pepper and mustard, and maybe chopped pickles.

All goes on regular homemade whole wheat or whole wheat french bread with lettuce/chard/other greens.

Mine is really basic too--boiled eggs, mayo till its right, black pepper and salt + scallions.
