We haven't had this thread question in quite sometime and it always generates some interesting responses...
SO, What are you having for lunch today?
I'm having Safeway light Key Lime Yogurt mixed with chopped fresh pineapple. I brought an orange for a snack later this afternoon.

Since I didn't bring lunch it will either be a WaWa shortie hoagie or out to lunch with my co-worker and it will be a salad of sorts.

I have been craving an avocado-bacon sandwich and since there is half an avocado waiting in the refrigerator to be used up...it must be fate.

I threw together a bunch of lingering things in the fridge and pantry last night...hardboiled egg, some tiny new potatoes that I steamed, scallions, olives, plus a bit of LF mayo, sour cream and cumin...for a main dish potato salad.

Nothing too exciting. Still trying to fit into my dress for my sister's wedding so its the good ol' grilled chicken salad w/ FF red wine vineagrette....:rolleyes:

For me, it's a slice of leftover pizza...
a bag of carrot sticks...
a bag of sugar snap peas...
and a pear for later on in the afternoon.
Right now I'm eating vanilla yogurt with granola and blueberries (late breakfast).

My kinda lunch, Zackaboo!
Monday through Thursday, we all take turns making lunch for the office. My turn was yesterday and I made Chinese Chicken Salad.
Today, I hear it's Sloppy Joes (the hot kind) on rolls. I also spied some Cool Whip in the fridge. ;)

We have a bunch of leftovers to consume, so I'm having the odd combination of Grits Casserole with Pesto Butter (so yummy!) and Chicken Salad with Mint and Feta (also very good). I can't wait for lunch! :)

I have a lot of leftovers in my fridge that I need to get rid of. Today I'm having leftover Chicken Stew with Tomatoes and White Beans from Bon Appetit and CL's Parsley Biscuits. Hmmm. Think it's time for me to go heat up lunch. I'm getting hungry.

You caught me on a day when I had something different. Usually, it's natural peanut butter on sprouted grain bread, but today it was Tofurky hickory-smoked slices on rye with lettuce, and fresh cherries for dessert.
BTW, does anyone know how to make the "TM" symbol that I should have put after "Tofurky"? Anyway, pretend it's there.

Nothing as fancy as most of your lunches, but I'm having one of my favorites today -- a PB (Arrowhead Mills honey-sweetened) sandwich! :D Some sort of veggie/fruit on the side, too.

It is in the June CL, but I'll happily post it for you! The pesto butter is what puts it over the top.
Grits Casserole with Pesto Butter
The classic Italian basil sauce freshens a down-home favorite. Beaten egg whites give the grits a light, airy texture; the casserole will rise as it bakes but then fall shortly after coming out of the oven. Use caution as the grits cook on the stovetop; they tend to spatter, so stir them with a long-handled wooden spoon.
Pesto Butter:
1/2 cup loosely packed fresh basil leaves
1/4 cup loosely packed fresh parsley leaves
2 tablespoons grated fresh Parmesan cheese
2 tablespoons fat-free, less-sodium chicken broth
1 large garlic clove, minced
2 tablespoons butter, softened
Casserole:
4 cups 1% low-fat milk
1 cup fat-free, less-sodium chicken broth
1/2 teaspoon salt
1 1/4 cups uncooked quick-cooking grits
1/2 cup (2 ounces) grated fresh Parmesan cheese
1/2 teaspoon freshly ground black pepper
4 large egg whites
Dash of cream of tartar
Cooking spray
To prepare pesto butter, place first 5 ingredients in a food processor; process until finely chopped. Scrape down sides; add butter. Process until well combined. Cover and chill.
Preheat oven to 375°.
To prepare casserole, combine milk, 1 cup broth, and salt in a large saucepan; bring to a boil. Gradually add grits, stirring constantly. Reduce heat to medium-low; simmer 5 minutes or until thick, stirring occasionally with a wooden spoon. Remove from heat; add 1/2 cup cheese and pepper, stirring until cheese melts. Cool slightly.
Place egg whites in a large bowl; beat with a mixer at high speed until foamy. Add cream of tartar; beat until stiff peaks form. Gently stir one-fourth of egg white mixture into grits mixture; gently fold in remaining egg white mixture. Spoon into a 2-quart soufflé dish coated with cooking spray. Bake at 375° for 40 minutes or until casserole has risen and begins to brown. Serve warm with pesto butter.
Yield: 8 servings (serving size: about 3/4 cup casserole and about 2 teaspoons pesto butter)

I have some tortillas left over from the Peach and Brie Quesadillas, so I'm making Farmer's Market Quesadillas. And of course this time of year I can't stop buying fresh fruit, so I'll be eating fruit with every meal.

So far, a handful of GeniSoy Soy Crisps and about 6 pieces of Dove dark chocolate--washed down with Diet Pepsi. It's a well-rounded lunch. The soy crisps are round, the can of Diet Pepsi is round, and the Dove chocolates are round with corners (not to be confused with squares :D )

Sadly, my lunch is a Lean Cuisine Turkey Tenderloins w/ Mashed Sweet Potatoes -- I am secretly thinking about the Barbecue Chicken Salad w/ Fried Onions that I COULD have had if I went to Champps with the my co-workers ... sigh.

I've been cooking--a lot! :p Really. It's just that today I'm working on fixing a group project for one of my graduate classes that someone else put together and screwed up--and it's due today. While I don't have time to go fix myself a decent meal of last night's leftovers, I DO have time to hang around on the boards. It's all about priorities!

I made a big batch of vegetable and black bean soup the other day, so I've been eating that most days, including today's lunch. If I get hungry later on, I'm having a low-fat beef hot dog (because I've had a craving for hot dogs recently). I'm also trying to lose weight, thus the low-fat aspect of all of my eating these days.

A turkey wrap on a spinach tortilla. Pretty good, although there is something semi-greasy about the tortilla. Since I've been in love with the wrap concept recently, I think this weekend I'll make some tortillas so I can wrap myself next week! I also had some steamed zucchini & summer squash, and okra. Love that okra! I also successfully talked myself out of a bag of chips (step away from the empty calories!), and will be having some leftover steamed asparagus in a little bit.

Every day I bring a salad from home. Greens, whatever vegies are on sale chopped, grape tomatoes (yum) and some grilled chicken or fish that I grill on Sundays and then freeze. I ALWAYS top with Newman's Lite Balsalmic Vinagarette OR his Oriental one - I love those!

I usually keep mayonnaise, mustard and baby carrots in the fridge at work and make myself lunch everyday.
Today I had smoked turkey (from a local deli that smokes their own kosher meats), farmer's market tomatoes and mayonnaise on Big Sky Cracked Wheat Bread; Snyders honey, wheat pretzels and baby carrots.
And water.
And I have 4 small peaches from the farmer's market waiting my consumption.

I can give you the ® but I don't see the trademark symbol in th echaracter map. But for ® you hold down the Alt button and type 0174 on the numbers pad (won't work with the numbers on the regular side of the keyboard).
As for my lunch today I had leftover Chicken Marsala from June's F&W and some lovely creamed spinach!

I met one of my girlfriend's for lunch and we split a MoonBird Panini :o, which was grilled rosemary chicken, roasted red peppers, baby spinach and provolone on a panini.
Then I came back to the office and had my chocolate fix, 2 Dove Dark Chocolate Promises! YUM!:D

That sounds YUMMY Delanl!!!! I had half of a wheat wrap with egg salad, l,t,o,pickles and hot peppers. I saved the other half for breakfast tomorrow. I know it sounds gross to some but I prefer something like that instead of cereal, toast etc..... after I get home from my trainer.

Delanl - does that mean you workout with your trainer and don't eat breakfast first? How do you do it? I have eggbeaters on 1 slice of whole grain bread for breakfast the mornings I meet with my trainer for 60 minutes of weight training. I really don't have as good a workout if I only eat dry cereal and skim milk before I leave the house for the gym.

grilled chicken breasts
linguine in a lemon caper sauce
assorted breads with butters, flavored oil
biscotti and homemade icecream for dessert
I went to a friend's house and she served

I love Del Taco and have for years. It is one of my vices. Their fries are especially decadent. I will have to let my nephew know. He will probably want to make a special trip. He loves green burritos and any visiting friends from CA used to buy a bunch, freeze them, and he'd eat them at one sitting.
Another fun fact about Del Taco is that they are really clean. My friend's DH used to do welding for some restaurants and has seen his share of kitchens. Some of the worst ones were the "upscale" ones. He said that the Del Taco's were always kept clean.

Tomato Soup with Pesto and Chickpeas -a CL recipe which I take ALOT of liberties with, but it always turns out good, toasted whole wheat english muffin with Edamame hummus and tomatoes, sugar snap peas, and some raw broccoli. BURP!:D

I don't eat before I go to the trainer. I have to leave the house by 6:30 a.m. It is only 2x a week I meet with just him so it is not that bad. I also drink a 50oz bottle of water while working out with him so I feel full.

FYI, if you are lifting weights, it's not a matter of "how bad it is" or whether you feel full. If you're lifting weights on an empty stomach, after a full night's fast, the result is muscle catabolism -- breakdown of muscle tissue in order to fuel your workout, in other words. In short, you are shortchanging your own results.
You should have something about an hour before you lift, even if it's nothing but a protein shake and a couple of fish oil caps.

I am sooo bad at eating first. I should make a point of getting some protein bars to eat before I leave. You are exactly right about short changing myself.
