I'm on a 'no waste' kick, and have some red apples that are on their way out. Anyone have a recipe for scones/muffins/quick bread/coffeecake?

This is what I did with my "not so great apples"

APPLE CRISP 1 (Microwave)

Recipe By :New York Apple Association Pamphlet 11/00
Serving Size : 4 Preparation Time :0:00

Low Fat Microwave


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3/4 Cup Oatmeal
1/4 Cup Unbleached flour
1/4 Cup Brown Sugar -- Packed
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
2 Tablespoons Butter
4 Apples -- Peeled/cored/sliced thinly
1/4 Cup Craisins

Combine oatmeal, flour, sugar and spices. Cut in butter and set aside.

Pare and core apples. Slice thin and combine with dried cranberries. Pour apple mixture into an 8X8 baking dish. Sprinkle with oatmeal mixture.

Microwave on HIGH for 12 minutes. Serve hot with vanilla icecream.

NOTES : Placed it in micro on a turntable.

Here's something I did last weekend for guests and it turned out very tasty.

Southwestern Apple Crepes
Take two apples, peel and core, slice thinly.
Saute in very little butter, cinnamon and sugar. Add a dash of ginger (ground) too.

After apples have sauteed a few minutes, put
a small amount on a flour tortilla and roll up burrito style. You may brush the top with butter if you like, or just dust with powdered sugar. Bake about 15 minutes until tops are slightly browned and crisp.

Serve with ice cream or lowfat yogurt.

Look under recipe search theres crumb apple cake, muffins, you can make (yummy) apple upside down, applesauce, caramelize them as a topping for pork chops. Last months CL had a cake under buttermilk article with apples......
