View Full Version : Any GOOD reviews of Strawberry Cream Cake?

I've seen a couple threads about the Strawberry Cream Cake (from the April issue), but I've only seen one post from a person who has actually made it. I thought it looked really good, so I'm hoping some other folks may have tried it had better luck with it. Anyone?

I am waiting for strawberry season to try it. Despite the bad review, I think I'll take a stab at it anyway, but that's still a few months off. Sorry!

my daughter made it on sunday==not too good. small layers--had to make a one egg cake to have 3 layers . thought the frosting was not good. hope someone can report better results

They had it on the Today show on NBC...wouldn't think they'd advertise it there if it weren't one of the best of the issue. Huh.

Maybe someone from the Cooking Light test kitchens could tell us what they thought of it and any special hints to make it turn out well. Anyone?

My mom would love for me to make this for my grandfather's 90th birthday in about a month, but if it's not good...

I am making this cake for Easter. I made the layers today and they look fine. I tasted the batter and it was good. I'll let you all know how it turns out. I'll try to remember to post Monday. Have a blessed Easter everyone!
This Strawberry-Cream Cake got rave reviews from all family members! They rated it a
8-9 out of 10. I did not change the recipe at all except I used about 1 cup of strawberries between the layers as opposed to 3/4 cup. I covered the top with strawberries and didn't really measure. The layers were a good size and I did not see a need for more cream cheese frosting (I read on another post where some thought so, I guess it would depend on how much icing you like).

Sorry to bring up an old thread but I made this last night and wanted to give my 2 cents after putting in the effort! This cake has a very processed, sort of store-bought kind of taste due to the strawberry gelatin (I just used jello because I couldn't find Knox gelatin in strawberry flavor and the jello packet was 3oz so I guessed that's what they meant) and cool whip. Plus the cake is a very bright pink color that is very unnatural and a little odd looking. The sugar didn't dissolve into the cool whip either, making the filling a little grainy and it still tasted just like cool whip. The taste was OK, I didn't have any problems with the layers, they were nice and thick but it just tasted too "fake" to me for all that effort. If I were to try it again I'd omit the gelatin and cool whip and just use the cream cheese frosting all over but I probably won't bother.

I've read about this cake for awhile now, and personally I really never like to add strawberries to a cooked batter.
WHY? Well, I like to have a good cake base and a good strawberry filling. For this reason, a classic strawberry bavarian (sorry, this one is NOT light) is still my favorite. I don't even make them out of season. If a customer requests a bavarian and strawberries don't look/smell worth buying, I won't make it.
I think that strawberries are very delicate, and cooking them in a batter really takes away, especially if you can't get a local, super sweet variety of berries.
This is just my professional opinion, and the taste opinion of my family. But, when the season hits, out comes the bavarian recipe! It's one that I look forward to every year.

I made this for my boyfriend's birthday last week and we LOVED it! I have to say it looked really pretty too... the only bad thing is that there's only 2 of us and it was way too big for us! the best part was the cream cheese frosting, oh so yummy! http://www.cookinglight.com/bbs/smile.gif
