Maybe I'm dreaming, but it seems I saw a recipe for some kind of one dish meal with couscous, and cut up chicken and some other ingredients in an issue of C/L not too long ago, but when I started looking, I couldn't find it. Does anyone have any ideas? My son is home from school for several weeks and I am looking for quick "non-exotic" meals. I'm not used to feeding more than two anymore, so it's a big adjustment. Thanks

There's a chicken and couscous recipe in May 2001--yogurt marinated chicken--that has gotten great reviews. You marinate the chicken overnight and throw it on the broiler for ten minutes while you make the couscous... Sounds pretty easy to me. Mine is marinating right now, so I can't report back yet, but I thought the ease of prep was very appealing about this recipe.

There is another one in the April 2001 issue. I think it was in the section about pantry staples. Spiced Chicken and Couscous. Its on my list for the weekend.
