View Full Version : Great dinner last night - Salmon, Asparagus, Potato patties...

We made the Barbeque roasted salmon, (back to the best May), the Ecuadorean Potatoe- and Cheese patties (April 01) and the Asparagus and Mushroom Skillet posted by Kbucky on the "my favorite asparagus recipe" thread on this BB.
All 3 got rave reviews...this was the first time I had made that salmon recipe, it was really yummy!
Kbucky- that is my new favorite asparagus recipe. I added some extra Italian herbs to it and sprinkled some shredded Parmesan over at the end. -YUMMY!
It cooks up pretty quickly, too.
The Ecuadorean Potato and cheese patties were really yummy, I used fresh chives instead of green onions, and they were really good.
Everyone raved about the meal.

this sounds terrific! Salmon and asparagus make an appearance at least once a week on our dinner table- now I've got some new ideas!

True to my word- I tried (most of) this menu out. The salmon and asparagus were fantastic and so easy. They've both received rave reviews on other threads, so you must try these! DH polished off the asparagus....

Instead of the potatoes, I made the Chickpea-Vegetable Salad with Curried Yogurt Dressing (May '01, pg 166) Another winner and plenty of leftovers for lunches tomorrow. I would used this dressing as a potato salad dressing- I hate mayonnaise and the yogurt was a perfect foil. I'm casting about for potluck dishes and this is perfect, without the lettuce even.

We started with a Columbia Crest Semillon-Chardonnay and a new Salieri CD (piano concertos) and ended with a Bonair (another Columbia Valley wine) Frankensauv- their "house" blend of Cabernet Franc and Cabernet Sauvignon- incredibly ripe, chewy fruit- lovely with the salmon and a little Al Jarreau.

Continuing with the May '01 theme, dessert is the tofu-based Butter-Rum Pudding (page 182). We didn't have any rum, so I used bourbon http://www.cookinglight.com/bbs/redface.gif Oh my- I just had a spoonful and it's pretty strong. Wheeeeee....
