My topic is pretty self-explanatory. I told my husband that for my birthday this Sunday I wanted him to cook me a nice dinner - He had to plan and buy everything himself. He's using mangoes and they're not quite ripe yet. Should I put them in a paper bag?

Happy Birthday! My birthday is Saturday, but my husband is not cooking! (but he is taking me out to dinner) I have never ripened mangoes in a paper bag but I think it would work if you need to hurry the process. I also think that putting something in a big bowl with other fruits seems to make it ripen faster -- maybe they all give off the same "ripening" chemical. Gaye

I've never tried this, but I've heard that it speeds the ripeining process if you also put a banana in the bag.

Happy Birthday to both of you!

Leave underripe mangoes at cool room temperature for a few days to soften and sweeten--very warm temperatures can cause an off-flavor to develop. Place two mangoes in a paper bag to speed ripening (or, if you don't have two mangoes, put another fruit such as an apple or banana in with the mango). Ripe mangoes will keep for two to three days in the refrigerator.
