View Full Version : What Can I Make WIth Chicken Tenders & Mushroonms?

This is what I have plus the usual suspects - canned tomatoes, garlic, onions but no other veggies -- Any suggestions as I can't come up with anything that uses these ingredients and no others -- I DON'T want to go to the store to buy one ingredient.:)

You could simmer all those ingredients together with a few spices and maybe a bit of red wine, and serve them over rice for a quick and easy meal.

Chicken Parmesan with mushrooms? Or something like a cacciatore stew- with the mushrooms, chicken and onions in the tomato sauce. You could serve it over pasta or polenta.

Chicken Marsala? -- assuming you have some marsala, but if not, maybe some other wine sauce?
Or a simple bake/broil? Put the tenders on a bed of tomatoes, top with sliced onions and slivered garlic, and bake until chicken is almost cooked, then throw under broiler to crisp the onions.
Stir-fry with hoisin sauce or whatever other Chinese condiments you have on hand?

I just made this the other night. It is very good - not a wow, but I thought it was worth making.
Skillet Chicken Pasta
From
Cream cheese makes the sauce velvety.
1 (9-ounce) package fresh linguine
1 pound chicken breast tenders
1/4 teaspoon seasoned salt
1/8 teaspoon black pepper
1 tablespoon butter
1 cup presliced mushrooms
1/2 cup sliced onion
1/2 cup dry sherry
1 cup fat-free, less-sodium chicken broth
1/2 cup (4 ounces) 1/3-less-fat cream cheese
Cook pasta according to package directions, omitting salt and fat. Drain.
While pasta cooks, sprinkle chicken with salt and pepper. Melt butter in a large nonstick skillet over medium-high heat. Add chicken, mushrooms, and onion; sauté 7 minutes or until chicken is done. Remove from pan; keep warm.
Add sherry to pan, scraping to loosen browned bits. Stir in broth and cheese; bring to a boil. Reduce heat, and simmer until cheese melts (about 3 minutes), stirring constantly. Return chicken mixture to pan, and cook until thoroughly heated. Serve over pasta.
Yield: 4 servings (serving size: 1 cup chicken mixture and 1 cup pasta)

Hmmmm...now where exactly would one find "Mushroonms" if one were to look for them?:p
