I'm making peanut butter blondies and the recipe calls for a 9x9 inch pan - of course I don't have one.... I have an 8x8, 9x11 or 10 inch springform.... Any suggestions of which one to use? Thanks!!:D

I'd use the 8x8, it will have to cook a wee bit longer, though, since it'll be thicker. If you'd PREFER thinner, you could use the 9x11 and cook less time than called for.

The 10" springform is closest in size; a 9x9 would have a surface area of 81 sq inches, the springform 78.5=sq inches; the 8x8=64 sq. inches, and the 9x11=99 sq inches.

I would go with the 8x8. I had a bunch of recipes calling for that elusive size (9x9). I one at a Ross for cheapo -- good quality dark nonstick as recommended by CI. They always seem to have some -- of course that was several months ago and I haven't used it :D
I have the Rosie's Bakery book and all of her bar cookie recipes seem to use that size.

well I decided to try the 10inch springform.... it looks like a cake instead of a brownie.... this is also a new recipe so we'll see how it tastes - DS1 will be my taste tester!!:D

A good place to remember is www.whatscookingamerica.net Then go to Q and A, then Baking hints. There you will find your pan sizes. I use if often, it also tells you about baking temperatures.

Thanks Ann - I bookmarked the site. I found I needed to bake these "bars" an additional 15 mins so the middle was done. Two thumbs up from my son though - he LOVES them!!;)
It's a King Arthur recipe called Peanut Butter Smoothies - all PB!!:)
