I'm having company over for dinner tomorrow and I'm planning on having this. Has anybody heard of white king salmon, and if so, how would you suggest cooking it? For those of you that haven't, this is the same fish as the King salmon, except the white salmon eat only shrimp making their meat white. It's delicious, I just havent' found the perfect recipe for it yet...any suggestions? TIA

I have had white salmon and really it tasted just like any other salmon. My favorite way to serve salmon is with a hollandaise or bernaise sauce with asparagus and risotto as sides. I think you could just search for salmon on the board and come up with many suggestions.

I had it in a restaurant recently served over roasted fingerling potatoes, wild asparagus and caramelized shallots. It was drizzled with a sherry vinaigrette. Delicious!

I have tried regular salmon recipes on the white salmon, but I feel the white salmon is more 'meatier' than regular salmon and some recipes didn't quite work as well with the white salmon. The roasted fingerling potatoes and carmelized shallots sound wonderful. Maybe I'll play around with that and see if I can figure out something that works. Thanks!
