Ah, life in a small town. :D There weren't many entries I'm sure--but still I did win!

I baked 4 pies this weekend as a test, and ended up using my own made up version for the filling --(one that I had created a few years ago, but still tweaked further this time).
I used the Cook's Illustrated Pie Dough from their "classic apple pie" recipe but I used vanilla sugar instead of regular. I just love that crust!

I've picked up the habit of making several recipes for something at once from this BB. The ability to compare recipes side by side just does amazing things for knowing which one suits your own taste buds. I had my family over for a "taste test" and it was interesting to see what other people liked (my parents both liked their apples much mushier than DH and me).

Anyway, it was fun!

Happy to hear your baking adventure was first place! Are you going to hang the ribbon in your kitchen?

Apple pie is a hit or miss baking adventure for me. I have made Apple Pie Soup to Towering Crust - Itty-Bitty Apple Layer Pie and somthing in between.

BeachBum's Apple Pie

Pie Crust: (CI recipe)
2 ½ cups all purpose flour
1 tsp. salt
2 TBSP sugar (I used vanilla sugar)
12 TBSP chilled butter, cut into 1/4" pats
8 TBSP Crisco, chilled (I used butter flavored)
6-8 TBSP ice water

Pulse flour, salt, and sugar in food processor. Add butter, pulse 5 times. Add Crisco, pulse 4 or 5 more times.
Turn dough into medium bowl, add ice water by the TBSP. Press dough together with the back of a spatula. Squeeze dough gently together. Divide in half. Pat into 4” circle. Wrap in cling wrap. Refrigerate for 30 minutes up to 2 days.


Pie Filling:
3 apples-Granny Smith, Golden Delicious, Jonsgold, sliced and halved

3/4 cup brown sugar
1 tsp vanilla
1 tsp cinnamon
1/8 tsp nutmeg
3 TBSP flour (reserve one for later)
3 tsp corn starch

Combine above ingredients and sprinkle on apples. Mix well. Let mixture sit while you roll out the bottom crust.

Scoop apple mixture into pie crust bottom. Sprinkle with 1 TBSP flour. (Pour juicy part in at own risk!) Roll out pie crust top, and cover pie. Vent crust.

Bake at 450 for 10 minutes, then lower temp to 375 for 45 additional minutes or until crust is golden brown.

How great! Apple pie is total mood food. I have been known to add a teaspoon or so of apple jack liquer to the apple mxture. Mmm-mmm.
