I hope someone can help me with this cooking problem. My muffins never ever get brown on the top. I have a gas stove, I have tried moving the racks up and down to no avail. Does anybody else have this problem or can you help me solve it? I appreciate any help. I love muffins but I'm not going to make them anymore until I can figure this out. I usually have to brown them under the broiler and then they end up dry. Besides, broiling under a gas broiler is another trick. I know, I know, WHY don't I just get an electric stove??? :) I wish.

Hmm..do they just not color on top or are they also not done inside? I have a gas oven and I never had such a problem...:confused:
Maybe it's not hot enough? Maybe the temperature is off?

Yes, I have an electric stove now, but grew up cooking with gas, and it's what I'd prefer if I had a choice. We never had a problem with foods not browning -- my mother ALWAYS had a cake or cupcakes or something in the oven, and they all turned out fine.

Do you have a thermometer inside your oven? I have a gas oven and was amazed at how long it takes to pre-heat. I used to have variable results with muffins, but since I started independently monitoring the temp of my oven, they have been much more consistent. Maybe your temperature is off or low...

It gets done on the inside, just doesn't brown. I'll try checking the temp. Thanks ya'll!
The temp could be low, a subbed or reduced fat can cause browning issues, or I have had problems with things not browning when baking powder started to get old but those things also didn't rise well and had a dense, almost rubbery texture. If you haven't changed the recipe, check out the oven first.
